Stankley Statement of the Week- here is this best recipe you could ever have for Sweet Potatoes
Crumble:
1 cup brown sugar
1/3 cup all-purpose flour
1 cup chopped pecans
1/3 cup butter melted
3 cups cooked and mashed sweet potatoes (I used a potato ricer to get a very smooth texture)
1 cup white sugar
1/2 teaspoon salt
1 teaspoon vanilla extract
2 eggs well beaten
1/2 cup butter melted, (1 stick)
Preheat oven to 375°. Grease casserole dish with butter.
For the crumble: Combine brown sugar, flour, cinnamon, nuts, and butter in a bowl. Chill the mixture.
Combine sweet potatoes, sugar, salt, vanilla, eggs and butter in a large mixing bowl. Mix thoroughly. Can add milk if it is too thick.
Put sweet potato mix in casserole dish. No crumble topping yet.
Spread crust topping on top and return to oven for 10-20 minutes or until crumble is browned.
