The ROAMies Podcast

Join us as we share smart strategies to help you plan and prepare for a fulfilling year of travel. Discover how thoughtful organization and practical tips can make your adventures in 2023 smoother, more meaningful, and stress-free.

Don't let all these tips, reminders, and checklists overwhelm you. The more you travel, the of these things become automated and routine. Listen to this episode months before your trips so you can make sure things are in place. Listen again while you're packing to help you remember things to pack and take care of around your home and work.

A note on the bedspreads!! They also make it SUPER easy to make your bed each morning. You're only pulling up and straightening ONE nice fluffy item. No corners to tuck in, no sheets and blankets to smooth out. It's home-making at its easiest!

VPN:
The issue with connecting to any random internet network is that open connections are often vulnerable to cyberattacks. For one, business and casual travelers alike have no choice but to use open and free networks when the occasion demands it. Putting their devices on shared connection points means a higher risk of discovery by unsavory internet lurkers, with the threat of getting their data exploited or stolen.

For those who like to work outside the confines of home or the office, a VPN acts as a safeguard against open or semi-open networks like the free Wi-Fi provided by cafes, hotels, libraries, and other public spaces.

Some countries, such as China and Indonesia, have blocked popular online streaming sites, and content sites, including Netflix and Hulu, are region-locked. If you would like to access geographically restricted content, a VPN is the key to the digital door.

• Browse fast & secure from over 90 global locations
• Stop hackers & other online threats from stealing your data
• Change your IP address so you can stay safe online
• Use the internet with your favorite services & platforms
• Bypass geographic restrictions on websites for streaming audio and video.
• Save money and find better deals (more on this in our next episode).
• Binge stream media on Netflix and Hulu.
• Safeguard yourself from snooping on unsafe Wi-Fi networks.
• Protect yourself from being spied on.

Here's a handful of highly rated companies to get you started shopping so you can see which VPN service is the best fit for you:

ProtonVPN
NordVPN
Mozilla  Firefox $3/mo
Express VPN
Cyberghost VPN

Couscous Recipe: During my recent cooking lessons in Juprelle, Belgium, I brought home. We made our own little tweaks and made it without meat. Until I get the video footage edited from cooking it myself with Ruth in Belgium,  you can find the basic recipe on this website link below. Since it's in French, you can watch the video and go to town! Enjoy a nice warm couscous "stew" during this cold season! Yumm!

KOSHARY RECIPE:
Courtesy of Rania Habashy

3 c. rice
1 cup vermicelli
3 c. elbow macaroni
2 8 oz. cans of tomato sauce
8 oz. lentils
1 onion, coarsely chopped
1 head of garlic, chopped
Cumin
Cayenne pepper
Pepper flakes
White vinegar
Vegetable oil
Salt and pepper
1 package crispy onions (or make it at home)

● Put 3T of onion in a saucepan with 1T oil. Stir until burned. Add water to the saucepan
until about 3⁄4 full. Add 2T cumin and 1t salt. Bring to a boil. Add lentils, cover, and cook.
Add water as needed to keep them covered.
● Tomato Sauce: Cook 1⁄2 onion in a small amount of oil, add salt and pepper. Add tomato
sauce and 4 cans of water. Simmer.
● Bring a large pan of salted water to a boil and add macaroni; cook until done. Drain and
rinse.
● Vermicelli: Sauté vermicelli in a small amount of oil until brown. Add rice, 1-1/2 cups of
water, and about 1 cup of lentil water. Water should be a little above the rice.
● Vinegar sauce: add 4T chopped garlic, 1T cumin, 1/3 cup vinegar, 1T salt, 2/3 cup water.
● Spicy Sauce: add 1⁄2 cup tomato sauce mixture, 1T cayenne pepper, 1T pepper flakes.
● Combine cooked rice mixture, macaroni, and lentils. Serve with sauces and crispy
onions
● Fried (crispy onions): 3 or 4 very large chopped onions (I prefer sweet onions), heat
some oil (either coconut oil or olive oil), and add the onions with a pinch of salt and
pepper, and keep stirring until it is dark brown (crispy) but not burned.
