The Charlie Cart Project was founded in 2015 by the former Director of the Edible Schoolyard Project and a team of educators and designers. They set out to create an affordable and comprehensive food education program, giving kids the power to make healthy choices for life.
The result is an all-in-one program—a kitchen on wheels and a full curriculum with classroom-tested recipes—connecting the dots between food, health and the environment.
Food education gets to the heart of our most pressing issues.
Health, climate, and economy, all are intrinsically linked to our food system. If we expect the next generation to make choices that support their health and the health of the planet, we have to provide basic education about food and its connections to the world we live in.
Food education is critical to improved health outcomes.
Today, 1 in 6 kids in the U.S. will go hungry. 1 in 3 will develop Type 2 diabetes in their lifetime. Food security and healthy eating require two things: access to fresh, healthy food; and basic skills to prepare that food. It’s simple. Food education is essential for lifelong health. (From Website)

Bio:
Longleaf Tea Co. is rooted on land that has been cared for by our family for six generations. The land was originally home to massive old-growth Longleaf pine, which gave way to the timber and clay mining industries during the early 1900s, and since 2018 has been the home of one of the few tea fields in the USA. The old farmhouse and red barn have been a gathering place for over one hundred years. Now they watch over thousands of tea plants growing in the south Mississippi sun.

Bio: I’m Micah, a Jewish, Canadian born Registered Dietitian and chef living in Northern California, specializing in recipe writing, food photography and story telling through food.
As both a Registered Dietitian and a trained chef, I see food through multiple lenses; as a Dietitian, I can evaluate, create, and tailor recipes and writing to best fit your audience, no matter their dietary preferences, and as a trained chef (from Natural Gourmet Institute, of ICE in New York City), I know the importance of creating recipes that work and taste delicious. Erin is a food, beverage, and lifestyle photographer based in the San Francisco Bay Area. She’s inspired by honest food, real people, and the magic of light.
She approaches every project with enthusiasm, flexibility, and a collaborative spirit. Bio:
"I grew up in a liberal Mennonite family that had ditched headcheese, dumplings, and sauerkraut in favor of lentil casseroles and tofu stir-fries. After college, I cooked professionally for several years in San Francisco before leaving the kitchen for the supposedly lucrative world of journalism.
I reviewed restaurants in the Bay Area and Seattle for 11 years as the staff critic at the East Bay Express, the Seattle Weekly, and SF Weekly. From 2014 to 2019, I was a features writer at the San Francisco Chronicle, where I covered the intersection of food and culture, with a particular focus on small and immigrant-owned restaurants — labor abuses in Taquerias, 50-year-old-neighborhood favorites ignored by the press, independent restaurants struggling with rampant gentrification.
I have contributed to the Wall Street Journal, Eating well, New Yorker, Bon Appetit, Hazlitt, Los Angeles Times, San Francisco magazine, Eater, Men’s Health, Wine & Spirits, and Lucky Peach (RIP). My first book, Hippie Food, came out in 2018.
My reporting and criticism have won awards from the James Beard Foundation, the International Association of Culinary Professionals, the Association of Food Journalists, and the California Newspaper Publishers Association, and my articles have been anthologized in several editions of Best Food Writing."

Bio: Susi Gott Séguret, author, chef, fiddler, forager, hails from Madison County, North Carolina, in the heart of the Blue Ridge Mountains. A Certified Culinary Professional and Certified Specialist of Wine, with a diploma in Gastronomy and Taste from the Cordon Bleu and the Université de Reims, Séguret is the founder and Director of the Seasonal School of Culinary Arts, which convenes four times a year in Asheville, Ithaca, Sonoma, and Paris, and also orchestrates a series of ultra-elegant wine dinners known as the Asheville Wine Experience; the gustatory extravaganza, the Asheville Truffle Experience; and a series of foraging-cooking-dining events aptly called the Appalachian Culinary Experience. Bio
Mariana Nuño Ruiz was born and raised in Guadalajara, Jalisco, Mexico, and comes from a long line of strong women. Margarita, her traditional grandma, kindled her passion for traditional Mexican cooking at an early age. Ana Fernanda, her modern grandma, inspired her to become a woman with a professional career and to see the world with wider eyes. The combination of their teachings ignited Mariana’s love for cooking and her curiosity beyond the kitchen, to learn about ingredients, their origins, and the history of foods. Thanks to her mom full support and hard work, Mariana earned an architecture degree from ITESO university in Guadalajara, Jalisco, Mexico. After working as an architect for more than eight years, she followed her bliss to acquire a culinary arts degree from AWC in Arizona. She has cooked in restaurants, catered, baked, and sculpted and decorated cakes. She also likes to teach cooking classes and workshops. Mariana enjoys mambo, food history, creating recipes, and collecting new and rare cookbooks. She also loves chiles and worships tomato season. Her last supper would be frijolitos de la olla. When she is not cooking, she is thinking about cooking.
Ian McEnroe was born in Michigan but grew up in Texas. His interest in photography started with a manual camera on which he learned to shoot film. Ian earned his Fine Arts degree from the University of Texas, which led to his award-winning photography and a long career as a photographic consultant and an instructor to hundreds of students at all levels of learning. When he is not taking photos, he enjoys painting, jazz, collecting records, reading, coffee, and, of course, good food. (Author Website)
