David shares his winemaking philosophy, which centers on avoiding producing the same wine over and over again. By utilizing different fermentation techniques, such as skin fermentation, barrel fermentation, and stainless steel, David crafts a spectrum of white wines that challenge the notion of what white wine can be.

As the tasting continues, Austin and David discuss the flexibility that comes with not owning vineyards, allowing David to source grapes from various locations and experiment with different varieties and blends each vintage.
