Karen's Favorite Cheesy Cauliflower If you are really craving Mac N Cheese, try this dish out. Your tastebuds are going to love you! INGREDIENTS 1.5 pounds fresh cauliflower 1/2 medium onion, diced 3/4 cup heavy whipping cream 3 oz cream cheese 1 tsp powdered mustard 1/2 cup muenster cheese, cubed 1 1/2 cup cheddar, shredded 1 tablespoon black pepper 2 cloves fresh garlic, minced 1-2 tablespoon avocado oil 1-2 teaspoons of avocado oil INSTRUCTIONS Preheat oven to 400 degrees Cut cauliflower into small to medium size chunks. Add to a large baking dish. Drizzle with avocado oil. Place in oven and roast until golden about 30 -45 minutes. Some pieces may be soft and some may be semi soft. This is OK. Meanwhile, at about the 30 minute mark of the cauliflower roasting start the sauce step below. In a large sauce pan, over medium heat add avocado oil, and sauté onions until softened. Add heavy cream to pan, lower heat and bring to simmer - do not let it boil. Break cream cheese into small pieces and add to pot stirring quickly. Add the powdered mustard, fresh garlic, pepper and sea salt to sauce pan. Once the cream cheese is smooth, remove pan from heat. Combine cream mixture with muenster cheese and 1 cup cheddar. Stir quickly with spatula until smooth. Add the roasted cauliflower to the pot. It is better to add the cauliflower because you can scrape the sides getting all the cheese. Add the cheesy cauliflower back to the same baking dish; top with remaining 1/2 cup cheddar cheese. Bake at 375 for 15-20 minutes until boiling and cheese is brown. You can freeze portions and this is wonderful reheated too! I love mine with Primal Kitchen's Spicy Ketchup Unsweetened; so good! Enjoy!
