Earl Grey MarTEAni

1 1/2 oz Earl grey infused gin*3/4 oz lemon juice1 oz simple syrup1 egg white

Dry shake all ingredients, then shake over ice. Serve in a sugar rimmed coupe; no garnish

*add 4 oz of loose leaf Earl grey tea (Twinings) to a 750ml bottle of London dry gin and shake. Let the tea steep for 3-4 hours, then strain through a coffee filter.
