One jar marinara sauce ( I use Trader Joe’s Tomato Basil Marinara) about 25 oz
2 whole carrots
2 handfuls of Broccoli florets
1 handful of spinach
1 bag (two cups) grated mozzarella (So Delicious has a great dairy free one)
2 containers of ricotta (Tofutti makes a vegan one)
2 eggs (or egg replacer/flax “eggs”)
1 tsp. Italian seasoning
6 oz. shredded Parmesan cheese (Violife makes a great vegan one!)
1 box of No boil noodles
Steam carrots and broccoli until soft
Reserve the liquid you cook them in (for the noodles.)
Blend carrots and broccoli with marinara sauce in a cuisinart or blender. (It will resemble a “meaty sauce.” Follow directions on no boil noodles and add the extra water from the steamed veggies. Usually it’s 1/2 cup water/milk for every five noodles.
Blend ricotta, eggs, spinach and Italian seasoning together in a bowl and set aside.
In a 9x13 glass casserole, spread one cup of the prepared marinara over the bottom.
Top with one layer of noodles.
Spread 1/2 of the ricotta cheese mixture over noodles, then one cup of the marinara, and sprinkle one third of the mozzarella and Parmesan cheese over the top.
Repeat # 6
Top with the last layer of noodles, remaining marinara sauce. Sprinkle the top with the remaining mozzarella and Parmesan cheese.
Cover with parchment, then foil. (If the foil comes in contact with tomato sauce, it will break down the aluminum and you don’t want that in your lasagna!)
Bake covered at 350 for 45 minutes. Bake uncovered for another 15 minutes. Let rest 15 minutes.
