First losing the sight in one eye due to an abusive husband, then losing the sight in her remaining eye to a disease the doctors could not figure out, Pamela Hill has been blind a bit longer then Victor has, going through the same losses, losing her ability to drive, losing her independence and losing a purpose, but unlike Victor, she found a purpose, and the drive to become as independent as she was before she wen fully blind.

In fact, Victor didn’t realize how inspirational her story was, until he sat down and really talked to her about what drove her purpose in life, and what gave her the tenacity to not let blindness become her default attitude, especially when it came to her favourite pastime, reading.

A group of men, sitting in a converted garage studio, knocking back the suds on a hot Texas afternoon, and talking about their various home handymen projects…

Now picture the men as being blind and visually impaired, and you have the Blind Handyman, with Phil Parr, the creator, producer and host of the show, his compatriots, Don Shaw, Don Patterson and Tom Houston. Together, these men decided to get together to let people know that the blind can accomplish any job, if they have the know-how, and the funds with which to support their projects. The Blind Handyman crew bring you the first of those solutions, and the second one is up to the handyman, blind or not.

Zoe’s Greek mini spinach pies

Ingredients:

1 kg of baby spinach

600 g of feta cheese or 500 if you wanted less salty.

200 g of Graviera cheese or lesson by 100 g instead of the feta cheese for less salt.

Two pinches of black pepper

Two eggs lightly beaten

One small bunch of parsley finely chopped

One small bunch of dill finely chopped

Two leeks sliced

Two bunches of fresh green onions sliced

2 tablespoons of fine semolina

3 tablespoons of olive oil

¼ Cup milk

2 package of Filo dough

Olive oil for greasing sheets of Filo dough

Bullying:

Here is my question of the day! What are some of the inherent causes of bullying? Why do kids bully each other and why do adults do the same?

My respectful response to this is that it probably comes from several reasons. Our kids are being exposed to too much crime and violence and it is all around them. On the screens of their TVs and i devices. In the classroom and playground, in the home, and on the streets, malls, and almost everywhere. We need to make a concerted effort to change this. We need to encourage film makers, authors, and writers to tone down the crime and violence so that our kids can have a chance to be kids and enjoy what kids enjoy instead of having to defend themselves against needless bullying.

Baked Beef and Fried Pepper Burritos

What You Will Need:

Measuring cups

Measuring spoons

2 kitchen utility forks

a lightly greased baking sheet

Paper towels

Ingredients:

1 (15 ounce) package of fully cooked beef roast au jus, drained

1 cup of shredded Mexican four-cheese blend

1 half cup of drained jarred fried peppers

½ cup of corn and black bean salsa

4 (9 inch) soft taco-size flour tortillas

Cooking spray

Cooking Directions:

Preheat oven to 400 degrees.

Shred beef with 2 forks.

Place 1 third cup of beef,

1 third cup of cheese,

2 tablespoons of peppers

and 2 tablespoons of salsa

just below the center of each tortilla.

Fold the opposite sides of the tortillas over filling and roll up.

Place the burritos on a lightly greased baking sheet.

Coat tops of burritos with cooking spray.

Bake for 10 minutes, or until tops are golden brown.

Makes 4 servings.

Hints and Tips for the Kitchen:

Got a Burned Broiler Pan?

* Sprinkle the hot pan heavily with dry laundry detergent. Cover with a dampened paper towel and let the burned food steam for a while. When you get around to washing up, the pan should require little scouring.

Dropped Broken Egg?

* If you break an egg on the floor, sprinkle it heavily with salt; after 5 to 10 minutes, sweet the dried egg into the dustpan.

Being born blind adds a few obstacles to one’s life. Add Autism to the mix, and it brings a whole new set of obstacles, but a whole new set of obstacles helps a person to shine when they overcome those obstacles and live a successful life despite those problems.

Her parents could have babied her, but they didn’t. They gave Sandra the tools she needed to overcome any problems that affected her, and it shows in the life she leads.
