July 09, 2020114: Quarantine Kitchen with Brennan Dates Day 34 ON SUPER YACHT LOCKDOWN - Knife Block HatredIsolated in a super yacht galley on anchor for an 8 week charter in the CaribbeanKnife Block HatredIf you have a knife block and you love it, then I apologize for all of the reasons I present in this video as to why they're very strange and gross. I realize that I'm in the minority on these views and I'd say most people have a knife block in their home. I'm not sure why. I haven't been in one restaurant kitchen or yacht galley with a knife block. If the professionals think a knife block is dumb why does the general public seem to NEED them with the very essence of their being? The only thing worse than a knife block is throwing your knives into a drawer as if their sharpness was completely irrelevant. A knife really only does one thing, it cuts. In order for it to cut it needs to be sharp. It's like having a toilet with no water in it. You can still use it but you're not using the toilet as it was designed. Love your edges.Remember the bra burning of the 60's? I know its summer but lets light those knife blocks on fire and feel the warmth of their deaths on our faces. Smile and know you did the right thing. You did the smart thing. You raged against the machine. Do it for your knives.Hasegawa cutting boards are amazing. I didn't have one on this job but I've used them before. They are by far the lightest, cleanest most cleverly designed cutting that I have ever used in my 27 years of cooking professionally. Having your cutting board up off of the counter helps if your over 5 foot as it gets the cutting board to the proper height for cutting. Counter top heights haven't changed in a couple of hundred years, while humans in general have gotten taller. I just had to look at it for the absurd amount of hours it took me to edit this video. It annoyed me too. However, cut me some slack. July 06, 2020113: Quarantine Kitchen with Brennan Dates Day 33 ON SUPER YACHT LOCKDOWN - Caramelized LeeksThere is a better, slower, calmer way to get the water out of your leeks and to gently brown them. That is not the way shown in this video. This is the fast and dirty way to do it when there are a lot of other things left to do on your prep list. Keep a close eye on your leeks especially when the water has just evaporated and they're starting to brown quickly. Your wine or even some water will save them from getting too dark then lower the heat.This video took forever to make. I have more hours into this edit than my last four combined. I am entirely sick of looking at that dumb pot with the dumb leeks in it listening to my dumb voice say the same dumb shit over and over again. This video is dead to me. I look forward to never watching it or listening to it ever again.On a positive note I've learned so much more about editing with premier pro. I try out new techniques and dive deeper into old ones. It's much better than using my phone but its complicated and limitless in terms of what you can do. I'm using the last few of these Quarantine Kitchen videos to teach myself how to edit properly.
