I always believed there to be two types of people that work in school nutrition: those that “geek out” on the business aspect of our programs (budgets, food cost, meals per labor hour etc.) and those that would rather focus their efforts on the “fun stuff” (menu innovation, staff training, social media etc.).
There are few foods that are as nutritious and well-loved as peanut butter. It offers a nutritious option that counts as a protein in the school meal. Paired with whole grain bread, fresh fruit and vegetables and a low-fat milk – peanut butter and jelly is a lunch that provides energy for learning and activity.
