Meet Charles Back, Owner and Winemaker Fairview Wine and Cheese, located in Paarl, South Africa   

Charles Back, from lineage of great entrepreneurs, innovators and winemakers, took full responsibility for the farm in 1995 after it being in the family since 1902.  Wanting to do things differently, he introduced Mediterranean grapes such as Viognier, Tempranillo, Sangiovese and Petite Sirah to the Cape. He also began to make artisanal cheese – a business that has gone on to become every bit as prestigious and successful as wine. In 2014 Charles received the International Wine Challenge Lifetime Achievement and recognised as the most awarded winemaker in South Africa

Uncork was birthed in 2017 by Fred Hart. What started as a personal memory bank quickly snowballed and became a passion-project. Craftsmanship is the central element around which all content is created for Uncork SA.

Highlighting and promoting the amazing wine and spirits industry, and some of the characters behind the "liquid art". Over time this evolved to include Luxury accommodation, fine glassware and cigars which naturally fit.

About the Winelands welcomes Thornton Pillay, the Winemaker at Highgate Wine Estate in the Midlands, KZN, South Africa.

In 1996 the Kassier family came to purchase Highgate farm, what was then, a small 1ha hydroponic vegetable farm in the misty hills of the Kwa-Zulu Natal Midlands. 

Between 2010 and 2015, the family produced wine as an interest rather than for commercial purposes. In 2016 Thornton Pillay joined Highgate and the wine making process was officially professional.  Thornton having studied as a Wine Maker and Viticulturist in Stellenbosch, worked at Ernie els wines, Groot Constantia, KWV and in France (Burgundy), now became the Wine Maker & Viticulturist at Highgate Wine Estate taking the farm to a fully functioning wine estate. The opportunity then arose to build a Tasting Room to showcase and present the premium wines Thornton created. In 2016 Thornton bottled the first commercially produced wines of 1500 bottles. Highgate Wine Estate is now producing 17 000 bottles per annum.
