Anakin Skyalker had some of the coolest ships and Jedi Starfighters. Here are a list of them that we've seen in the novels, comics, movies, The Clone Wars (both 2D and 3D versions).

Something I found cool was that Jedi Master Saesee Tin encouraged him to keep upgrading and modifying the ships, while other Masters (probably even Mace Windu) saw this as a sign of attachment to his ships.
