咸蛋鸡腿卷 4人份
材料
A. 鸡腿(去除骨头和皮) 3 只 460g
B. 咸蛋黄(蒸熟并用叉子压碎) 3个
C. 咖喱叶 (只用叶子) 2 枝
D. 高汤 半碗
E. 玉米油 3汤匙45毫升
F. 铝箔纸 (按照2片香蕉叶的尺寸剪) 3片
腌料 (用于腌制鸡腿)
G. 酱青 2汤匙30毫升
H. 海盐 半茶匙2.5毫升
I. 料理酒 2汤匙30毫升
J. 玉米淀粉 半茶匙2.5毫升
K. 蛋白/清 1个
腌制鸡腿方法:
1. 将鸡腿除皮和骨头后放在一个大碗中,加入海盐,料酒,蛋清,酱青,玉米油,拌匀,放在一旁腌制30分钟。
2. 备用。
烹饪方法:
1. 30分钟后,用铝箔纸将每个鸡腿卷起来。
2. 卷紧后,入锅中蒸 30分钟。
3. 30分钟后,取出待凉后切成厚片,待用。
4. 热锅下玉米油,加入咸蛋黄和咖喱叶,炒约3分钟。
5. 3分钟后,加入高汤,搅匀起锅淋在鸡腿片上。
6. 即成。
Salted Egg Chicken Drumsticks Rolls
Serves 4 person
Ingredients:
A. Chicken drumsticks (remove bone and skin) 3 pieces 460g
B. Salted Egg Yolk (steamed and use a fork to mash till fine) 3 pieces
C. Curry Leaf (remove from stalks and use leaves only) 2 stalks
D. Concentrated Stock or Chicken Stock Half a bowl
E. Corn oil for cooking 3 tablespoons 45ml
F. Aluminum foil (cut to same size as the
length of 2 pieces of chicken drumstick) 3 pieces
Marinating
G. Light Soya Sauce 2 tablespoons 30ml
H. Sea salt Half a teaspoon 2.5ml
I. Cooking wine 2 tablespoons 30ml
J. Corn starch Half a teaspoon 2.5ml
K. Egg White 1
Marinating Steps:
1. Remove skin and bone from chicken
drumsticks, add sea salt , cooking wine, light soy sauce, egg white and corn oil onto drumsticks and let it marinate for 30 minutes.
2. Set aside for later use.
Method of Cooking:
1. After 30 minutes, use aluminum foil
and wrap each drumstick into a tight roll.
2. Turn on stove, place 3 cups of water
into wok , once water boils, place drumsticks rolls on a plate and steam for 30 minutes.
3. After 30 minutes, unwrap rolls and cut
chicken drumstick into thick pieces.
Set aside for later use.
4. Turn on stove, heat wok.
5. Once wok is heated up, add corn oil, salted egg yolks and curry leaves. Fry for 3 minutes.
6.. After 3 minutes, add in chicken stock and stir well.
7. Turn off stove, and pour sauce over chicken drumsticks ~30 seconds
8. Serve.
