水晶韭菜包子
4 人份
材料
韭菜120克
粉丝50克
饺子皮1包(食谱只用半包,但可以根据自己喜好增加或减少)
蛋2粒
蒜5瓣
鲜蘑菇3朵
黑糖半汤匙
胡椒粉半茶匙
蚝油1汤匙
酱青半汤匙
玉米油2汤匙
烹饪方法:
将韭菜洗净,切碎,放在一边待用。
将粉丝浸泡软,切碎,加入韭菜,放在一边待用。
将鸡蛋,胡椒粉和酱青放入碗中,搅拌均匀。
热锅并加入1汤玉米油,把蛋煎成蛋碎,约1分钟后,盛起放在一边待用。
热锅并加入1汤玉米油,加入蒜碎和香菇碎,炒香,约1分钟后,盛起放在一边待用。
将所有炒好材料加入韭菜,拌匀后加入蚝油,黑糖,拌匀,放在一边待用。
饺子皮加些玉米油用擀面杖,把饺子皮擀大(大概多半倍)
拿一张擀大的饺子皮放在手掌上,然后加入一汤匙*韭菜。
*可以根据自己的喜好添加或减少,大小隨意。
再用包包子的方法抓,把它包成包子状。
蒸锅水的滚后,把韭菜包子放入蒸锅中,用大火,蒸5分钟。
即成。
水晶韭菜饺辣椒酱
红辣椒2 条(去籽切碎)
蒜 2 瓣(去除皮肤并剁碎)
香醋2汤匙
黑糖半茶匙
烹饪方法:
将所有食材放入碗中,搅拌均匀。
Crystal Chive Dumplings
Serves 4 person
Ingredients
Chives 120g
Glass noodles 50g
Dumpling skin 1 packet (recipe uses half pack, can increase or reduce according to your preference)
Eggs 2
Garlic 5 cloves
Fresh mushroom 3 pieces
Brown sugar Half tablespoon
White pepper Half teaspoon
Oyster sauce 1 tablespoon
Light soya sauce Half tablespoon
Corn cooking oil 2 tablespoon
Method of Cooking:
Wash chives and chop them into small pieces and set aside for later use.
Soak glass noodles into a bowl of water, once softened, chop into small pieces and add into the chives, then set aside for later use.
Put eggs, white pepper and light soy sauce in a bowl and mix well.
Heat pan and add in 1 tablespoon of cooking oil.
Once pan is heated up, pour the egg mixture in and pan fry the egg for 1 minute, then scoop up the egg and set aside for later use.
Heat pan and add in 1 tablespoon of cooking oil.
Once pan is heated up, add in garlic and mushroom, pan fry for 1 minute, then scoop up and set aside for later use.
Add all the cooked ingredients together with the chives and mix well.
Add in oyster sauce, brown sugar and mix well and set aside for later use.
Using a rolling pin and some cooking oil, roll the dumpling skin into a bigger size *
Place one dumpling skin on your palm and put one tablespoon* of the chive mixture on the centre of the dumpling skin.
*Recommended size is one tablespoon , however you can add or reduce according to your own preference.
Grab the sides of the dumpling and twist to close the dumpling, making it like a bun shape.
Heat a wok of water, once the water boils and place the dumplings on a plate and steam it on high heat for 5 minutes.
Serve。
Chilli Sauce for the Crystal Chive Dumplings
Red Chilli (remove seeds and chop finely) 2 pieces
Garlic (remove skin and chop finely) 2 cloves
Black Vinegar 2 tablespoons
Brown Sugar Half teaspoon
Method of Cooking:
Put all the ingredients into a bowl and mix well.
