[00:00:03]
stories and triumphant successes
of business owners across the land.
[00:00:07]
One thing I think we can all agree
on is that donuts are awesome.
[00:00:11]
Think that's safe to say.
[00:00:12]
So we brought Taylor Carlson,
the general manager and co owner
[00:00:16]
at Greenbush Bakery.
How are you doing today?
[00:00:19]
Doing good yourself.
I'm doing awesome.
[00:00:21]
Yeah, I'm doing I'm excited because
we're in this new studio here.
[00:00:27]
And so this is the first
[00:00:29]
video, live video that we're doing
the podcast interview on.
[00:00:33]
So.
So welcome man.
[00:00:35]
And if anything breaks, sorry.
[00:00:36]
Yeah.
[00:00:39]
So Greenbush Bakery.
[00:00:40]
Let's start out first.
[00:00:42]
Where did the name come from?
[00:00:43]
So Greenbush Bakery
[00:00:46]
came from the neighborhood
that our original location was at.
[00:00:50]
Oh.
So that neighborhood down
[00:00:54]
off Regent Street is known as
the Greenbush neighborhood.
[00:00:57]
And it's always, you know,
it was where the Italian immigrants
[00:01:00]
arrived and it's still named the Greenbush
neighborhoods is kind of where that name
[00:01:05]
came from when my grandparents
bought the business.
[00:01:07]
OK.
[00:01:08]
So there was a bakery that was down
on Regent Street few years back,
[00:01:13]
and that's my grandparents purchased
the bakery when it was kind of rundown
[00:01:18]
and dingy and
changed the name to Greenbush Bakery.
[00:01:22]
And they bought that in March of 1996.
Wow.
[00:01:27]
So they've owned the business
for 24 years now.
[00:01:30]
That is so weird.
1996 to me
[00:01:33]
it seems like that was just the other day,
right?
[00:01:36]
Yeah, I was crawling back then.
[00:01:39]
I feel old.
Yes.
[00:01:40]
So that was our original
location down there.
[00:01:43]
All right.
And we built another location
[00:01:49]
on the east side of Madison
a little over three years ago now.
[00:01:52]
Sure.
[00:01:53]
And then we just relocated that original
location at the end of August.
[00:01:57]
So it's almost like a year now
since we've moved to that location.
[00:02:01]
And we just moved it
down like the block.
[00:02:04]
Sure.
I'm still on Regent Street.
[00:02:05]
OK.
So it's just kind of a new spot and.
[00:02:08]
Sure.
So we've got two locations in Madison now,
[00:02:12]
so.
All right.
[00:02:14]
Yeah.
So do you know the story about why your
[00:02:16]
grandparents chose a bakery
or specifically that bakery?
[00:02:19]
It was.
It's kind of funny.
[00:02:22]
My grandpa always talks about,
[00:02:23]
like all things kind of led up to his life
to owning the bakery.
[00:02:28]
All right.
So he's done numerous things in his life.
[00:02:30]
He was in the Navy.
[00:02:33]
He sold insurance.
[00:02:36]
He's worked at Oscar Meyer for numerous years.
[00:02:38]
So he
[00:02:40]
has done all these
different jobs where he kind of
[00:02:44]
I think it was kind of almost like
[00:02:45]
an impulse thing where he just decided
just. Let's just buy a bakery. Do something new and
[00:02:50]
ended up in the bakery business.
All right.
[00:02:53]
So, yeah, it wasn't really any,
like, crazy story behind it.
[00:02:56]
I think she was just kind
of opportunity that came up.
[00:02:58]
And when he originally bought the bakery,
he had a business partner in on it
[00:03:02]
with him that he ended up buying out
a few years after they purchased it.
[00:03:07]
So him and my grandma like the main ones
[00:03:10]
that have owned the business
for sure all these years.
[00:03:13]
So he had to be older ish, relatively.
Yeah.
[00:03:16]
He bought the bakery.
He's in his 70s now.
[00:03:18]
So he was in mid 50s.
Mid 50s.
[00:03:22]
Yeah. Around 50.
All right.
[00:03:23]
So.
So career shift.
[00:03:25]
Yeah, a little bit.
Going from insurance to selling donuts.
[00:03:30]
So did he,
[00:03:31]
the bakeries itself was existing
at the time that he bought.
[00:03:34]
Yeah, there was there was a bakery there.
[00:03:37]
It wasn't Greenbush but there was
a bakery there when he purchased it.
[00:03:41]
So he had to do a lot of upkeep
to kind of bring it up to speed.
[00:03:45]
And that's kind of what,
you know, has made the business.
[00:03:49]
What it is, is just his
ability to be a handy man.
[00:03:52]
And now, sure,
every aspect of the business and kind of
[00:03:55]
do things on his own to kind of, you know,
bring the business where it was.
[00:03:59]
And it's I mean, even the last like five
[00:04:01]
years of us getting
the East Side location.
[00:04:03]
yeah. And relocating,
[00:04:04]
it's completely different game
than it was twenty four years ago.
[00:04:09]
I bet. Just as far as the locations
and volume that we do now.
[00:04:13]
But I mean. Is it more or less?
[00:04:15]
Well, yeah, a lot more.
[00:04:17]
What do you attribute that to?
[00:04:19]
Is it more people just around Madison?
[00:04:20]
I think just how Madisons
growing and you know, with us
[00:04:25]
just being a staple in Madison
for such a long time
[00:04:28]
you know, I think with,
you know, the university kind of growing
[00:04:32]
and just the Madison as a whole, even
like the outskirts, Sun Prairie here.
[00:04:35]
Yeah.
[00:04:37]
You know, I think that's
kind of a tribute to it.
[00:04:39]
And we've just kind of always had a high
quality product where, you know, people
[00:04:44]
word of mouth kind of talk about us.
[00:04:45]
And,
[00:04:47]
you know, we kind of do something
[00:04:48]
that a lot of places there's not too many
places in the area that do what we do.
[00:04:53]
So I think as far as bakery here.
Yeah, I mean,
[00:04:55]
I think just with the quality of stuff,
I mean, sure, there's bakeries
[00:04:59]
all around Madison.
[00:05:00]
But right now, our main focus
is I would say donuts.
[00:05:03]
So, you know, there's a lot of bakeries,
good bakeries in the area that do,
[00:05:07]
you know, cringle or cakes
and stuff like that.
[00:05:09]
But as far as what we do,
[00:05:10]
I don't think there's really too many
people that can compete with us for what we do.
[00:05:14]
Sure,
sure.
[00:05:15]
So,
[00:05:17]
yeah. That's cool.
Yeah. That's cool.
[00:05:20]
Yeah.
So I feel like donuts are one of those
[00:05:22]
things that just seem to be
popular at anytime, regardless of
[00:05:27]
the health kicks.
[00:05:28]
I guess that people may
or may not claim to be
[00:05:32]
right.
[00:05:32]
It's a cool look around
the world you like.
[00:05:34]
Well, not too many people.
[00:05:36]
So I mean, you show up to a party or
with some friends over the box of donuts.
[00:05:42]
No, it's going to be like
[00:05:45]
even if it's January 2nd,
I'm going to lead them.
[00:05:48]
Yeah.
[00:05:49]
So tell me, is your bread
and butter business.
[00:05:52]
The one on one,
like the the person walking in buying
[00:05:55]
a few dozen or a dozen or six
donuts or something like that?
[00:05:58]
Or is it a huge
butter wholesale where you're saying yes.
[00:06:02]
So we try we do wholesale stuff in
[00:06:06]
local grocery stores
and markets in the area.
[00:06:09]
Okay, so we're in like
the Hiva Mecca Sherriffs Willie Streets.
[00:06:13]
All right.
[00:06:15]
And Woodman's.
[00:06:18]
So we're just in the
Madison area for that.
[00:06:19]
And we do package product for that.
[00:06:22]
OK, but that's really only probably like
a fifth of our business that we do.
[00:06:26]
So it's mainly like our
retail or both locations.
[00:06:31]
Our Eastside location is kind of gradually
[00:06:33]
grown and I think that's just what
the area here sure has kind of.
[00:06:38]
There's apartments and houses
going crazy over here.
[00:06:41]
Oh, my gosh.
And I like weeds.
[00:06:43]
Yeah.
[00:06:44]
In downtown, you know,
with the students or.
[00:06:47]
Right on campus down there.
Sure.
[00:06:49]
Anytime they're at athletic events
going on down there, we're busy.
[00:06:52]
Yeah.
[00:06:54]
Yeah.
I think, you know, with our retail, that's
[00:06:57]
definitely our, you know,
big business that we think.
[00:07:01]
So I think,
you know, with everything that's going
[00:07:05]
on too, it's been tough because we were
able to keep doing that wholesale stuff.
[00:07:09]
And that was, you know,
with people only being the go to grocery
[00:07:12]
store here these last few months,
we've been really busy with that in our
[00:07:16]
wholesale accounts have kind
...
