In the Early 1980s, David Stewart, the Master Distiller at Balvenie began an experimaent that no one beloeived in. Mr. Stewart took 12 year old scotch that had aged in ex-bourbon barrels and then transferred it into a Sherry Cask. While Sherry casks had been used before to age whisky, no one had ever tried using multiple casks. Stewart was a pioneer in the evolution of wood finishing, and in 2016, he recieved an MBE for services to the Scotch Whisky Industry.
