BLOOMING ONION FRIED CHICKEN & SAVORY HORSERADISH DIP CHEDDAR WAFFLES WITH CINNAMON THYME HONEY

DIRECTIONS:

Preheat waffle iron. Beat eggs in large bowl with hand beater until fluffy. Beat in flour, milk, vegetable oil, sugar, baking powder, salt and vanilla, just until smooth. Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown. Serve hot.

BLOOMING FRIED CHICKEN

Put oil in a large cast iron skillet and heat to about 300 degrees. Re Fry the blooming onion a little so it becomes crispy. Let cool. In a food processor blend the onion until it’s a little crushed up. Put onion , ¾ cup flour, corn meal, salt, pepper, cayenne, and dried thyme
all together in a large bowl. In a separate bowl whip the eggs and buttermilk together.

In another bowl put ¼ cup flour.  Pound out chicken thighs so they are about 1 inch thick. Salt and Pepper the chicken and dredge them in flour. Then dip back in egg milk mixture. .

Now Put chicken in the onion, flour, corn meal mixture and make sure you roll it around so all parts of chicken are covered. You can even press it down a little. Put chicken in oil and fry on each side for about 3 minutes each side. If its smoking you can lower the heat.  Take chicken out and put on a paper towel or brown paper to take the excess oil off.

CINNAMON THYME HONEY

HEAT up honey with fresh thyme and cinnamon stick. Let sit for about 15 minutes. Serve warm waffle with chicken on top and drizzle with warm honey

The virtual lounge is open and Ty and Nick are honored to welcome award winning filmmaker Robert May to the virtual lounge.  His new documentary "Kids for Cash" chronicles a scandal that rocked not just Pennsylvania but the nation.   The movie tells the horrifying true story of how two Pennsylvania judges took money from a juvenile detention center builder in exchange for prisoners! 3,000 kids had their lives changes forever.  Nick and Ty have a candid conversation with May about why he decided to make the film, and how the movie changed the way he thinks about juvenile incarceration.  This is one episode of Beats and Eats you won't want to miss.

Chef Chris Barcia and wife Beth gave Ty and I an opportunity to interview General Hospital legend, Kim McCullough. Beth and Chris own Palazzo 53 in the rejuvenated City of Pittston, PA.

Palazzo 53 has become the anchor of a renaissance growth on Main Street, in Pittston PA. Several months back I had the privilege of interviewing Councilman Michael Lombardo about the rebirth of Main St. USA and he mentioned Palazzo as one of the keys to Pittston, becoming a model for other small cities in North East PA (NEPA).

You may ask, what does the soap star have to do with Chef Barcia and Palazzo53? Well, Chris and Beth secured Kim's appearance on B&E. McCullough has many local ties to NEPA and will be conducting a Q&A, with local soap fans and industry professionals, at Palazzo 53 today (Saturday, May 17th).

So sit back and enjoy a little pop culture discussion between Ty Ray and Nick Gelso, sandwiched by a fantastic conversation with General Hospital's Kim.
