Welcome to our new listeners on Minds Eye Radio.  Today we give some tips for making a rue when you are blind or visually impaired.  We also talk about the importance of food preparation before starting your cook.  Then Chris shares his favorite recipe for smoked Mac & Cheese 

Cook a box of macaroni noodles and drain.  In a 9x13 pan, melt 5Tbsp of butter and mix in 3Tbsp flour to make your rue.  Then stir in 4 cups of milk while stirring on medium low heat.  Now add 3tsp +/- of flour favorite all purpose or bbq rub along with 2 cups of freshly shredded sharp cheddar.  Once cheese is melted you can add the cooked macaroni noodles and either serve or top with some more shredded cheddar and sliced jalapeño peppers, place in smoker at 300F for about 3045 minutes or until cheese on top is completely melted. Enjoy

We picked up a billy goat that was terrorizing the small town of Jerome, MO, with plans for a BBQ.  That goat turned into a coon treeing machine and we gave him away to someone so they could have a bbq. That goat learned to dance and survived another bbq pit.
