Back for the second part of my conversation with restaurateur Josh Carlsen. We talk tipping. Is it on the way out? Should it be included? What does it all mean moving forward with fair wages for staff?
Covid brought to light all of these issues bubbling just beneath the surface of most restaurants, but where do we go from here? How do we make sure those small, full of culture and vibrancy neighbourhood Joints get a seat at the restaurants moving into the future table.
I get into a two part conversation of some real talk with original food truck pal and fellow restauranteur Josh Carlsen, owner of Tacofino and Superbaba. We talk shop, including tech and the new ways of online ordering and customer service. We also discuss the positive aspects of having an opportunity for complete rehaul and do-over in our industry but can and will everybody make that shift? Also, Sick pay in the hospitality industry-say what? No we're not dreaming, we're all reinventing our businesses and it needs to happen now in order to survive.
I meet up with my dear friend Jack Widow for a socially distanced first time out beer at a beloved Victoria "craft beer parlour". On their patio, freshly reopened since food and beverage establishments were forced to close due to covid, we talk anxieties and being creative in a challenging time. We discuss boundaries and what our priorities are during this weird summer. Things are definitely a different vibe and not our usual normal, but the community support of each other that has budded from all this sure is cool.
