Ingredients
olive oil

chop the onions, peppers
heat the olive oil in a pan
add the onions to the pan, fry them until soft.
add the peppers and stir.
grate the tomatoes and pour them into the pan.
a bit of seasoning : salt & pepper
after a while, crack the eggs, stir them.
cook them for a couple of minutes.and if you like sprinkle some parsley on top.
