15 miles up the North Shore from Canal Park is one of Duluth's most celebrated restaurants rebranded as an Airstream food truck called Scenic 61 due to the ongoing Coronavirus pandemic.  Chef/owner Scott Graden, has pivoted his Nordic cuisine multiple times to meet the changing restaurant landscape.

He is about to embark on the Minnesota State Fair with his Sashimi tuna tacos, a dream he has had for over 20 years. We catch up with Scott before his State Fair debut.

We had the opportunity to catch up with Kristy Boike who with her father Ron,  developed Rudolphs Bluebird Houses, a Bluebird House-making company. The Bluebird House making was a way to process the grief that  Ron was feeling from the loss of his wife from Breast Cancer.

 Andy Berg worked in the corporate office setting for more than 15 years as an engineer. And then, 2020: cue the pandemic. Latitude Studios is a solution born from a problem, as all the best ones are. Andy and his wife Sarah were thrust into work-from-home life, as many of us were, in 2020. and they needed a separated workspace that was, in fact, not in their home. Thus, the idea of building studios out of shipping containers was born. The new shipping container - workspace studio allowed Andy to “go” to work in the morning but still lock the door and leave work at the end of the day. He and Sarah’s wheels started turning, and soon, Latitude Studios was born.
