We're getting a leg up on Mental Health Awareness Month with our special guest, Thessaly! TBH, you should all be talking about mental health year-around, but we thoroughly appreciated and were so, so moved by listening to Thessaly's story and her own mental health journey. This is not a light episode by any means, but is one of our most important. We cannot express how much we were in awe of our guest and being able to chat with her.

One breakfast ring to rule them all*:- 5 eggs- 1/2 red bell pepper, chopped- 1/2 green bell pepper, chopped- 1/4tsp salt- 1/4tsp pepper- 8 slices bacon, cooked- 8oz. crescent rolls, refrigerated- 3 scallions, chopped- 1C shredded cheddar cheese- 1 egg for egg wash (optional; we ain't got time for egg wash!)
Preheat oven to 375F degrees. Beat the eggs with the chopped peppers, salt, and pepper. Cook and scramble eggs in a skillet. Lay out the crescent roll dough on parchment paper (we didn't have this so we ended up making mini rolled up egg/cheese thingies) like a star. Lay a piece of bacon on each crescent roll, add half of the cheese around the ring. Then add the scrambled eggs around the ring and top with the rest of the cheese. Fold the crescents over. This is when you can brush with the egg wash if ya wanna get fancy with it. Bake for 20 minutes, or until golden brown. Eat!
*honestly, use whatever ingredients you have/want. It'll probably work.
