Restraint, by Institution Ale Company, is a brown ale that balances toasted dark malts and American hops. Hard maple wood adds a woodsy dryness and slight maple sweetness.

When Institution Ale Company became Camarillo’s first brewery and tasting room in 2013, the craft beer wave had just begun to hit Ventura County. Roger Smith co-owns the company with his sons, Ryan and Shaun. Institution began as a nanobrewery, or a scaled down microbrewery, in the industrial area of Camarillo, brewing three 100-gallon batches of beer every week. Between supplying two taprooms and distributing draft beer to bars and restaurants in Ventura and Los Angeles counties and the Central Coast, the brewing operation in Camarillo is nearly maxed out! Looking forward, they see themselves needing to grow in order to meet their high demand.

Communist Poodles in Connecticut, by Paperback Brewing Company, is an American Stout that’s smooth and roasty with hints of coffee notes and chocolate malt.

Paperback Brewing Company’s journey began with building a small pilot brewery in their garage, which quickly became nicknamed “The Lab.” Not sparing any expense, their brewery consisted of everything that would help them brew a high-quality product similar to the commercial breweries that they loved. Black Walnut Dunkel, by Perennial Artisan Ales, is a chocolate brown German Dunkelweizen aged in Missouri-grown black walnuts. Big aromas of banana sit on top of this malty wheat beer, and it finishes with a nice black walnut nuance on the palate. Pairs with roasted quail and desserts made with chocolate or bananas

Perennial Artisan Ales’ philosophy is to brew beer with the adventurous craft beer drinker in mind—focusing on hand-crafted, small batches of beer, using local, seasonal and organic ingredients as much as possible. Their beers are influenced mostly by Belgian and American craft styles, but the addition of premium ingredients such as fruits, spices or wild yeast strains sometimes causes the beers to defy traditional categories. Their barrel aging program features a wide variety of beers aged in wine and spirits barrels, ranging from a Rye barrel-aged Mexican Chocolate Stout to a wild yeast-fermented Saison aged on Missouri wine grapes in French oak wine barrels. They strive to always achieve balance with each of their recipes, making their beers exceptional with food.

Anchor Christmas Ale is a subtly spiced and sumptuously smooth winter warmer. This year’s brew marks the 47th annual release of this Anchor holiday tradition. Year after year, Anchor creates a new, secret recipe with a unique hand drawn label for their Christmas Ale, but the intent with each brew remains the same: joy for the changing seasons and celebration of the newness of life. This year’s Winter Warmer contains notes of rich, bittersweet chocolate with hints of raspberry and light mulling spices such as cinnamon, clove, nutmeg and cardamom.

Anchor Brewing Company opened in 1896, making it one of America’s oldest breweries. Bierkrug by Mumford Brewing, in collaboration with Our Mutual Friend Brewing Company, is a crisp and hoppy version of a German style Oktoberfest.

Started by brothers Peter and Tom Mumford (no relation to the band), they started out homebrewing because their Dad was actually a homebrewer back in the ’70s. After a couple of years into their own homebrewing, they began to think that they were doing something that would make a worthwhile endeavor in the real world and started planning their brewery. Although the number of breweries in Los Angeles County has grown considerably since they first opened, and with the San Diego area having over 100 operating craft breweries, they felt there was definitely an unmet need at the time for LA to have more craft beer.

Zombie Dreams was created with the idea of bringing the flavors and notes of a cranberry mimosa to beer. After letting their in-house lactobacillus culture sour their wort, they added cranberry puree and Sauvignon Blanc grape juice to the fermentation. This resulted in smooth aromas of sweet cranberry with hints of tropical fruit. On the palate, the carbonation brings forth the mix of fruit during fermentation with a backend acidity to round things off.

Mikkeller Brewing started when Mikkel and his childhood friend, Keller, began working on a series of ‘physics experiments’ using malt, hops, and yeast in their home kitchens in Copenhagen. The kitchen experiments lasted for two and a half years and while they continued, Mikkel and Keller also began brewing beer on a larger scale at the Danish microbrewery Ørbæk. In the beginning of 2007, Keller left Mikkeller to pursue a career as the editor of a music magazine, while Mikkel remained on his own to continue pursuing his dream of taking Mikkeller to another level. Mikkeller's growth was rapid, and in 2010 Mikkel decided to bid farewell to his students and colleagues at the school he taught at and decided to commit himself full-time to the brewery.

The Monkster Mash is a red-amber ale brewed with real pumpkin and a touch of spice. Gentle carbonation animates the rounded mouthfeel and it closes clean with a smooth finish.

In their community, each monk’s work is assigned after matching up community need and the individual's interests and abilities. A few years ago, one of their brothers expressed interest in brewing and even did some training at a local craft brewery. Over time, his passion for brewing affected some other monks, who recognized that brewing was a very traditional monastic enterprise. Thus, when the time came to re-chart the economic path for the monastery’s future, the idea of a brewery gained traction, and the monks eventually voted on building America’s first Trappist brewery. Observing Trappist tradition, they have named the brewery, and the beer, Spencer after their beloved town of Spencer, MA.
