    Canada had a bad 2023 wildfire season. So bad, in fact, that the carbon emissions from Canada more than doubled from what the country usually emits. So bad that Europe was inundated by smoke from the Canadian wildfires. So bad that Yellowknife, the Northwest Territories largest city and one that is often more associated with ice and snow, had to evacuate due to the looming threat of wildfires.     Sushi is as Japanese as, well, Japan! The dish is something that's so intrinsically tied to Japan that Sushi restaurants don't even have to advertise their place in the same way that Italian restaurants or Chinese restaurants do. In this episode, Geoff and Hunter go through the incredibly deep history of Sushi and how it expanded from a once isolationist and insular country to become one of the world's most popoular food items.
