On the show I talked about making sure to stay organized with your supplies, keeping knives and other tools sharp, making sure to use time wisely, and also making smaller pieces from your produce and protein.

On the podcast, I mentioned a variety of ways to cook them, or eat them raw with ranch dressing, but there are even more things you can totally do with them! One of the craziest things I’ve seen in my Pinterest searches is carrots as vegetarian hot dogs! What? I haven’t tried that… but YOU sure can if you want to HERE.

As we get closer and closer to what is basically the super bowl of food, I wanted to shine some light on the ever popular main thanksgiving dish: Turkey. Like the other “basics” that I’ve chatted about, Turkey has a light taste that lends well to many flavors and cooking styles. From ground to giant legs, there are many choices for prep and cuts.
Tune in to find out what I’m dong for Thanksgiving, a little info, and to meet my FIRST EVER guest!

The lowly potato is so much more than you even know! Brown, red, white, sweet, or golden… you can hardly go wrong when you use them in your meals. This week on the Happy Healthy Meals Podcast, I shared some fun ways to use and flavor them that are not fried (although French fries are often my go to treat food!)

For this week, on the HHM podcast, I decided to chat about the basics PLUS. Meaning, taking a basic ingredient and then putting your own spin on it. While you can apply this to so many things on your plate, I decided to focus on chicken. In the coming weeks, I will feature different ingredients.
This basic of the American table has many benefits and can be cooked in many different ways. Not that I recommend having it daily (variety is KEY in nutrition), but I DO want to encourage you to try new flavorings, cuts and cooking methods.
NOTE: ALWAYS buy organic vegetarian fed when you can! This is super important! You are whey you eat eats.... you don’t even want I know what commercially raised chickens eat. No really. It can be So gross.

Remember to keep trying new things to find more happy healthy foods you and your family will look forward to.
Sandwiches have been one of my fave meals since I can remember making my own PB+Js (on toasted sourdough!) as a kid. They are quick, simple and so easy to change up for the season or tastes.
Hot or Cold. Messy or Neat. Wrapped or flat.
I’ve even made dessert sandwiches - no really: layer a thin slice of moist cake with Nutella and sliced bananas and you’ve got yourself a delicious, light dessert. Plus, they are super fun in mini size on toothpicks at parties! Listen in for some yummy ideas!
