Recorded just before cooking Halloween dinner, this week we talk about why it is so important to keep even the simplest traditions alive for our family! Jaime shares her girls' favorite Halloween dinner recipe- Monster Eyeballs!
1 pound ground beef or turkey
1/2 cup finely crushed tortilla chips
3/4 cup grated cheddar cheese
Garnish: Sour cream, black olive halves, smooth hot sauce
1. Combine ground meat, taco seasoning, cheese, all but 2T tortilla chips in bowl and mix together. Scoop into wells of mini muffin pan. With back of scoop, press the meat mixture into pan. Sprinkle remaining chips
2. Back in 400 degree oven for 14 minutes
3. Allow to cool in pan for 3-4 minutes. With sour cream in the corner of a ziploc bag, pipe into well of each "eyeball". Top with black olive half and drizzle with hot sauce. Serve alone or on a plate of greens or guacamole. Great for a taco salad too!
