People all across the county will be trying their hand at cooking the tasty treat for pancake Tuesday.

Historically, Shrove Tuesday was used as a means of using up surplus eggs, butter and milk prior to Ash Wednesday.

The day has also been noted as a day of indulgence, ahead of the beginning of an extended period of abstinence during Lent.

Doris along with the rest of the O'Connor's Bakery in Ennis, have been up since first light preparing pancakes for delivery.
