This week, I sit down with Matt Christie, who is the owner and executive chef at the best spot in town, Streets on Carson. If you've ever listened to an episode, you probably know I ride for Streets on Carson like it is my own. - A year ago, I asked Matt to come on the podcast and talk about his roots, where his love of cooking came from, and the process of opening his own restaurant. Its a great conversation and you can hear all about that on EP 22 but this week we talk about so much more. - Streets on Carson specializes in "Street Foods From Around The World" and today they have a brand new menu dropping. We talk about the process of picking new dishes, the special ingredients needed to cook some dishes, where recipes come from, and how Streets executes the delicious recipes so that they are still authentic to their homes. I've always been fascinated by restaurants but I've never had the opportunity to work in one so I never fully understood how one works. This week that changes. I filled in as a food runner at Streets for a few days so I got to see how a professional kitchen is ran. The timing, prep, and process of a functioning kitchen is mind blowing and we talk all about it. We also talk about how I fucked up and dropped two full plates of food down the steps as I was running them to a table. SMH. This whole conversation is great. I love Matt and his wife and I am so happy to know them and have them supporting what I do with the podcast.
