Brierley Horton, MS, RD, is a dietitian nutritionist, content creator, and mental health advocate. Her current role is senior editor for People Inc., where she contributes to digital food brands, such as EatingWell and The Spruce Eats. She holds a master's degree in Nutrition Communications from the Friedman School of Nutrition Science and Policy at Tufts University.
Carolyn Williams, PhD, RD, is a culinary nutrition expert, dietitian, author, and a James Beard Journalism Award winner. Her first cookbook, Meals That Heal: 100+ Everyday Anti-Inflammatory Recipes in 30 Minutes or Less, was released in 2019. Her second cookbook, One Pot Meals That Heal, was released in 2022.
