Salt & Straw, the handmade ice cream shop chain with 19 locations on the West Coast, is expanding into Miami with two locations (Coconut Grove and Wymwood). Cofounder Tyler Malek joined Mike Beltran in Ariete's underground bunker for a conversation about ice cream, telling a community's stories by using its own ingredients, and and balancing a love for the craft of handmade ice cream with an expansion that will have Salt & Straw touching opposite coasts.

James Beard Award winner (Best Chef South 2010) Michael Schwartz is our guest on this episode of the podcast. He and Michael Beltran — who we will refer to as Chug in this text from here on out in the interest of clarity — discuss their relationship, which began when Chug was working at the Cypress Room, and how it's evolved over time. Michael discusses the birth of his flagship restaurant — Michael's Genuine Food & Drink — the expansion of Genuine Hospitality Group (Tigertail & Mary, Amara at Paraiso, Ella, Genuine Pizza, Harry's Pizzeria, etc.) and the the lessons he's learned about being a restaurant operator and his role in nurturing young talent. Plus, our first ad! Get excited, people; we're gonna be talking La Caja China for a bit.

Playwright Vanessa García and director Victoria Collado are partners in Abre Camino Collective. They're the creative force behind Amparo, an experiential theater production about the story of Havana Club rum that has become the hottest ticket in Miami (and been referenced numerous times on Pan Con Podcast). On this episode, Vanessa and Vicky join Mike to talk about Amparo, Cuban identity, ordering coffee outside Miami, the creative process, and how to deal with the growth of your team and all the delegation that comes with that. Also, Vanessa wants everyone to get tattoos, Vicky goes full Pichy Boys, and Mike spent some time in Portland, Maine.

Eileen Andrade became well known to Miami diners when she opened Finka, a Cuban-Korean-Peruvian fusion restaurant. Finka is now five years old and Eileen also has a second restaurant, Amelia's 1931. Both restaurants are in the suburbs West of Miami. She grew up in the family behind Islas Canarias, one of Miami's most popular Cuban restaurants and the consensus source for the best croquetas in the city. In this interview, she talks about her Cuban heritage, walking away from the fashion industry to join her family's business, and what it took to establish herself and her food as distinct in the minds of restaurant patrons in Miami.

This is part 2 of Mike Beltran's sit-down with renowned chef Norman Van Aken. In this portion of the chat, the two talk about Norman's experience publishing books, mental health issues chefs deal with, and the time Norman passed on participating in Top Chef Masters. Norman is one of the most celebrated and consequential chefs in the country. Widely regarded as the founder of New American cuisine and a pioneer of "fusion," Norman has led renowned restaurants, published numerous books, and a nominee for and winner of countless awards, including an induction into James Beard Foundation’s list of “Who’s Who in American Food and Beverage" (where he's the only Floridian chef on the list). Norman also happens to be among Michael Beltran's mentors. Mike refers to Norman as his "culinary godfather."

Sadly, Norman Van Aken has never won a Cubayashi Cup, but he counts this among his goals moving forward. Norman also happens to be among Michael Beltran's mentors. Mike refers to Norman as his "culinary godfather." In this conversation, Mike and Norman talk about the beginning of their professional and personal relationship, cooking in South Florida, having conversations through food, and the question of whether cooking is an art or craft.

Aniece "Ani" Meinhold grew up in a family that always had hospitality on the brain. Bred to be the consummate hostess, she's the brains behind the customer experience side of Miami's Phuc Yea and Pho Mo. In her Pan Con Podcast debut, she talks about growing up Puerto Rican, her German and Vietnamese heritage, and bringing a new take on Asian cuisine to Miami. She also shares her perspective on social media and working with food influencers, which doesn't quite line up with Mike's.

Mike went to Cleveland to work on a collaboration dinner at The Plum, a restaurant helmed by his friend Brett Sawyer. In this special one-mic episode, Mike and Brett talk about how they became friends (spoiler: there's a lot of alcohol involved), their approaches to their respective expressional restaurants, mental health issues, and the value (or lack thereof) of media that claim to identify "the best" things in any given category.

Mario Obregón is a founding member of the band Problem Kids. Their fusion of hip-hop with Caribbean rhythms is as patently Miami as their ability to swing from irreverent to introspective from one verse to the next. Mario is also a high school friend of Mike's. In this sit-down, they talk about Mario's beginnings in music, the similarities and difference between their creative processes, and Mario's maturation as an artist. Mario also gets into the mission work he does in his mother's hometown in Cuba.
