The quarantine period a lot of chefs is using their free time to explore and learn new things, and all of a sudden baking artisanal bread and having your own sourdough starter as a 'pet' is trending.
In Indoneisa, Artisanal Bread is usually expensive to buy, and sadly the price did not meet the quality. Hopefully with this new trend we can enjoy good artisanal bread more often. May you and your starter be safe and healthy !

The cultural difference, labor law, and the 'accepted' working hours of restaurant workers are different from country to country. The quicker you adapt, and the faster you will thrive and hopefully conquer all the challenges you face, and become a better cook.

Jethro Vincent is the Culinary Director of 8 Degree Projects, which owns and operate various restaurants in Bali including Sisterfields, Bossman Burger, Bikini Bali, Fika, and Sibling.
During these tough times, restaurants have to invent new ways to survive. While focusing delivery services might have worked in Jakarta and other Big Cities, it is not the case for a lot of businesses in Bali.
Despite all that, we can't give up. We have to keep positive, keep on keeping on for our businesses, for our staffs, and for ourselves.
This too shall pass!

Kade Chandra is the owner of Maple and Oak, Yabai Izakaya and Barong Indonesia. Dick Derian is the owner of Locahands, Djajan Kopi, and When You Find Us Private Dining all based in Surabaya. They are the co-founder of Nasi Telor Ambyar in both Surabaya, and Jakarta. Everyone is still at home, still confused and all restaurant is facing an uncertain future if they are able to open again.
We discussed the situation in both Jakarta and Surabaya, and the open PO phenomenon, which taking over FnB business all over Indonesia.
