Hey everyone, welcome to another episode of SMT where we talk with husband and wife duo, Chef Michael Rose and Jane, of Jane's Bistro. Michael tells us about how big crab boils, and shrimp 'n grits affected his pathway to becoming a Chef in District 7 of Saigon. And, a little later in the interview Jane joins us to fill us in on what it's like dealing with staffing issues and so much more. Join us for this great episode and check out Jane's Bistro in Phu My Hung!
(They have a lot of great media on their Facebook page....)
Find them in the Phu My Hung ward of District 7:

Hey everyone, we had the pleasure of speaking with Paracaidista founder, Adrian, during his trip around Southeast Asia to spread the word about his fantastic beer all the way from Mexico City. We got to hang with Adrian the night before at a table of great beer heads and greater beer guts from the robust Saigon scene and get to know him before the interview. So, we can safely say that he's a great guy and his love for refining the process of making craft beer is admirable!
A big thanks to Adrian and Paracaidista! We hope you guys enjoy this great interview.
(Also, Paracaidista translated into English from Spanish means "parachutist")
Episode #011
Hey everyone, for this episode we sat down with Thanh Charles of Meatworks Butchery here in Thao Dien, Saigon. He was nice enough to take time away from his business and tell us how he got into the business and what his life has been like in Vietnam. It's safe to say we'll be hearing more about him in the future!
We hope you all enjoy, we certainly did!

Hey everybody, welcome back to Sexy Meat Talks, the show that gives you an inside look at food and bev in and around Vietnam and Southeast Asia. On this week's episode we talked to the legend himself, Sonny of Best Ever Food Review Show about how he, Mark and Chef Jamie tackled the conundrum of cooking a full 110kg ostrich. We also spoke about how he does things for his show, how he first started, and some stories from his adventures in making his super popular series. We know you'll enjoy it!

This is Sexy Meat Talks - Episode #009
Hey everyone, we got to sit down and talk with a real insider who was rockin’ around Vietnam as an expat long before most who live here now. Find out what was going on in the early 2000s when families blasted children’s music CDs, why so many Vietnamese dishes are served as small separated dishes, and going to the hospital after eating crab is kinda normal — and, how truly good Vietnamese food pleases all five senses!
Hey everyone, thanks for checking into the podcast. Today we have our 4th episode with chef Jamie Celeya. Hope you enjoy!
Welcome to the 7th installment of Sexy Meat Talks!
This time on the podcast we have Tim Scott, co-founder of Quan Ut Ut and Bia Craft right here in Saigon. Knowing that we’d be interviewing Tim, Mark prepared for consumption what the Nisqually Native Americans call a geoduck (Pronounced: gooeyduck), which means “genitals” in their language. Google it to find out why!
It was a fun and informative episode that gets into Tim’s trajectory in Vietnam that led to the collaborative creation of Ut Ut, and would serve anyone well to listen to if they are thinking about doing business in Vietnam or Southeast Asia in general. For me, I learned early on that bears and deers go together like hops and malt, and that when I think just a little bit before I speak I can actually ask good questions.
We liked this quote from Tim about his experiences working on grills:
“Coming through the rush period and getting the last steak off the grill… it was kind of this euphoria that is hard to describe but it was so, so good.”
Find out just what he means and check out more on our seventh episode!
Hey Everyone, welcome to our 6th episode of Sexy Meat Talks! This is Part 2 of a special cross-over event between Seven Million Bikes and Sexy Meat Talks. As previously teased, Niall Mackay reached out to us and we ended up recording one episode on each podcast. This one features us drinking some beer, geeking out about podcasts, discussing Mark's hairiness, Niall's love for meats wrapped in blankets, Josh's lack of an ability to focus, a monsoon of an interruption, and so much more! We really hope you enjoy and can't say thank you enough to Niall for being an awesome fella. Thanks, Niall!
