THE COOKIE:Brown 200g butter until it smells like toasted hazelnuts. Cool. Cream with 150g dark brown sugar and 50g white sugar. Add 1 egg + 1 yolk, 1 tsp vanilla. Fold in 250g flour, 1 tsp baking soda, 1/2 tsp salt, 200g dark chocolate chunks. Rest dough overnight in the fridge. Bake at 180°C for 11 minutes. Flaky sea salt on top.
