1 c freshly grated Parmesan (feta or goat is also good)
1. Remove kale leaves from stems
2. Chop kale into small bite-sized pieces and put in serving bowl
3. In small bowl, smash garlic with salt to make a paste
4. Add lemon juice to garlic-salt mixture
5. Add Parmesan and olive oil to mixture
6. Pour dressing over kale and massage in with hands. Let sit for a few minutes before serving
