In this episode, we begin a conversation about mixtures and proportions in food.  How should individual ingredients be prepared when they’re going to become part of a larger dish?  How much of each component belongs in a mixture?  These are the initial questions we consider, using salads and pasta as examples.  Enjoy!

In this episode, we shift perspectives and start to look at food preparation as a process.  We talk about what it means to prepare food, introducing three areas of concern:  meaningful food, mixtures and proportions, and the dilemma of the ends and the means.  Finally, we enter into an extensive discussion about meaningful food.  How can we craft meaningful food, and how can we make simple and mellow foods into understated masterpieces?

In this episode, we discuss the vast variety and quality of baked goods, including pastries and danishes.  We deconstruct these enigmatic treats, starting with their bread base and examining the nature of croissants in particular.  Enjoy!
