A conversation with Eli Shiran, Owner and Winemaker for the Shiran Winery in Kiryat Arba, Israel. Eli has been making wine for over 10 years, choosing to keep his winery Shiran, a small Boutique winery, while selling his wines throughout Israel, especially in hotels and upscale restaurants. Shiran also exports his wines throughout the United States and Europe. 
I hope you enjoy this discussion, as I had fun with Eli's quick wit and bad-boy persona. In true Israeli style, he is thorny like a cactus on initial interactions, but when you get to know him, he is a lovingly sincere and passionately Zionistic individual.

The following is a conversation with Sam Baum. 

The new young winemaker and co-owner of Family Baum Winery. 

Where many of us only dream of owning our own winery, Sam a London-born young man, made Aliyah, Served in the IDF, fell in love with the land of Israel, and married his wife and winery partner Rifka. He searched out and found work in a renowned Judean Hills winery learning from the bottom up the skills he would need to realize his dream. 

For the last few years, he has planted and maintained a new vineyard for his employer, but continued to dream of creating his own personal brand, planting his own vineyard to source grapes for his and Rifka’s own family winery. 

He just completed production of Family Baum’s second vintage, from grapes they purchased until their vineyard is built. 

He continues working hard towards that goal and is close to acquiring land for the development of the vineyard up north in the Golan. 

Sam is incredibly passionate about Israel, the vines, and creating Kosher wine. He has overcome many challenges and continues to be single-minded in pursuit of his dream!

Josh Rynderman is the winemaker for both Kos Yeshuos wines from Santa Cruz California (4 Gates Winery), and ESSA wine company based in Cape Town, South Africa. Josh and his wife Chana live in Cape Town, where she runs the business office of ESSA while he is the full-time winemaker. We caught up with Josh at home in Cape Town and discussed the challenges of harvesting grapes and producing wine in two locations 9,000 miles apart. His circumnavigation of the globe and schedule, along with his planning based on weather and specific wine varietals involved each year, make for a very interesting discussion. The following is my conversation with Ya'acov Oryah, one of Israel's most creative kosher winemakers. Ya'acov has a remarkable relationship with the desert, starting with his own winery Asif in 2008, located next to the desert city of Arad. He later moved on to the Midbar winery, also in Arad, and then joined Psâgot, located in the mountains of Jerusalem but never lost his desire to return someday to the desert. 
An offer to become the winemaker for Pinto, a newly created winery with its own vineyards deep in Israel's desert in Yeruchum, was just the right incentive to have Ya'acov return to his desert challenge.  This conversation is a bit technical but still enjoyable for those curious about the nuances of making wine in one of the most challenging environments.
