A lovely man to chat to, an accomplished baker and a true champion for local food Coinneach chose his three tings to change about the world of food.... He has just published his second book which you can get right HERE Called "My Scottish Island Kitchen - I cant wait to read it.
First, he makes the point that great places to eat need great people, and these people should be treated well. This kind of morphs into the idea that everyone should treat echoer better - and who can argue with that?
Secondly, Coinneach would like to change the world so that Menus are shorter, and with less pointless faff on them - a man after my own heart! - this is based on the deeper point that things are better when you keep them simple.....
Lastly he would like people to take greater notice of the seasons, and act upon them by partaking in some simple foraging - and then spend some time preserving that for sharing later.

He would drink his very own creation of a Hebridean Hogmanay Cocktail - Marmalade, tea, clementine juice and of course some Hebridean Malt!
