Add 6 ice cubes and shake for a further 30 seconds. Strain into a pre-chilled cocktail glass, through a fine mesh strainer. Shake vigorously until frost forms on outside of shaker. Pour without straining into a double old-fashioned glass. Using the back of a spoon, float sherry on top, and garnish with mint.
