Tina Vaughn and her Chef/Partner/Husband Chip Smith received a 3-star NY times review in January of 2024 for their restaurant Eulalie, a jewel-box of hospitality in Tribeca.

In this episode, Tina recounts her journey from Rockette to restaurants, the mission of hospitality and how to pair wine fearlessly from a place of learning and gastronomy.

If a restaurant with only a phone number for reservations (no reservation system like Resy or Open table) that leads to a notoriously long voice-message and presents hand-written menus with food from a chef that cooked with Jean-Louis Palladin in a dining room where wine is poured fearlessly AND you can actually talk without shouting is what you crave (and why wouldn't you?), then Eulalie is a place for you. 

This is the second 3 star NY times review for this talented couple. Their first was for The Simone, which opened in 2013 and closed in 2022 after the pandemic. 

We shared two wines, and they were fan-tastic:

Discover how a region marked by a population decrease from the Spanish Civil War is being transformed into a new and exciting wine-growing area on the edge of viticulture through the personal project of Juanvi Alcañiz in his hometown of Rubielos de Mora in Teruel, the southernmost province within the historic and regal area of Aragón, Spain.

Through the incredibly rare Miguel de Arco grape, along with old-vine Garnacha and Tempranillo, this project, Juanvi Viticultor, is growing at one of the highest elevation points in Spain to bottle his three special mountain wines: Rubielos de Mora, Quercus, and a special single vineyard of ancient-vine Garnacha called La Vińa de Báguena.

Juanvi shares his unique and trailblazing journey, thoughtful vineyard work and winemaking strategies, all in pursuit of showcasing the terroir and altitude of the vineyards of his home area.

Talented and NPR-voiced De Maison Spirits/NoLo manager, Annie Beebe-Tron, decodes the future of French whisky in the US by drawing a circle around the next important narrative in the landscape of artisan spirits by highlighting one of the great up-and-coming French Whisky Distilleries on the scene: T.O.S. Distillery in the Hauts-de-France - a young venture already making waves within the sea of the whisky world.

Quietly, French whiskey has experienced a remarkable transformation over the last two decades, with over 100 distilleries now dotting the French landscape.

On this episode, Annie walks us through a primer on French Whisky and the protected areas, and highlights  T.O.S. 'Artesia' Pure Malt Whisky, a single malt, single distilled whiskey matured in ex-bourbon casks with a whisper of French oak.
The Genièvre 'Boutefeu', a traditional, un-aged, grain-based spirit from the area aromatized with juniper berries.
And finally, one of the rare Eau-de-Vie de Bière in the US, the T.O.S. 'Humulus'.
