  • #19: how to stretch three dinners into a whole weeks worth of meals

How can three meals can be stretched into a whole weeks worth of dinners plus a few lunches? Batch cooking. It’s a beautiful and incredibly simple concept.

By bulking up your meals, you'll find yourself cooking only three nights per week, and simply reheating the remainder of the week.

    Recipe Ideas:

    1. Pan Seared Chicken with Pan Sauce + Brown Rice + Roasted Broccoli
    2. Rosemary-Pepper Crusted Pork Tenderloin + Roasted Potatoes + Roasted Green Beans (use the same sheet pan for an even easier clean-up)
    3. Vodka Sauce with Meatballs + Mixed Green Salad

  • #18: a big little love for liane moriarty and her novels

What I love the most about Liane Moriarty  novels is how gripping they are, mainly through excellent pacing, rich three-dimensional characters, and wonderful story telling. It’s the perfect medley for a novel that  you can’t and don’t want to put down. I also think that many women feel connected to Moriarty’s writing. She has this special way of digging deep and exploring all female relationships. Whether it’s between a husband-wife, mother-child, siblings, friendships / acquaintances, etc. She always seems to hit the nail on the head.

Recipes are easy to bulk up, which means… left overs! say hello to tonights dinner and tomorrows lunch

Hardly any clean up involved, other than tossing out your baking sheet line

    2. sheet pan crispy-roasted lemon-thyme chicken with crispy potatoes and tomatoes and zucchini
    3. spicy mexican bowl with honey-chipotle chicken & sweet potatoes with cauliflower rice, yellow peppers, black beans, & avocado

  • #14: why did the sun go to school? to get brighter! (our one thousand hours outside challenge!)

We are thrilled to join the 1,000 Hours Outside Challenge. At 1 and 2, my kids are so little but I’m a strong advocate for exposing kids to nature and allowing them to have outdoor free play at every age. 1000 hours breaks down to roughly 2.7 hours outside per day. Which yes, sounds like a lot, but it's totally doable! On today's episode, I'm sharing our daily flow with you and how we make it happen, what our summer days look like around here.
