In this episode. Paul is in Edinburgh Scotland at Holyrood Distillery chatting with Marc Watson. This was a great part of the trip! It was refreshing to see a single malt distillery with so much innovation and experimentation. 

Holyrood is a modern distillery in the heart of historic Edinburgh. Inspired by their surroundings, and never afraid to experiment, Holyrood is dedicated to shaping the spirit of tomorrow. With considerable experience in the whisky industry, Holyrood's founders had a vision to create a new kind of distillery, one that would reflect the dynamism and diversity of present day Edinburgh.
