Roast Tomato and Smoked Bacon SoupIngredients40g butter8 tomatoes roasted1 onion1/2 leek2 celery sticks3 garlic gloves minced2 stock cubes100ml double cream100ml balsamic vinegar150g smoked baconMethod1 - In an oven tray place the tomatoes with the balsamic vinegar and a place of salt and sugar, roast in the oven at 200 degrees for 20 minutes.2 - In a saucepan saute of the smoked bacon, onion, celery and garlic in butter.3 - Add the tomatoes to the saucepan with the stock, cubes and simmer for 40 minutes.4 - Add the double cream and blend.5 - Add a pinch of sugar and taste for seasoning.
