The Beer recipe (English at the bottom)
Ingredients:
1.5 kilo premium pilsner malt
1.5 kilo malted oats
0.5 kilo unmalted wheat
15 grams hops (from a local garden)
18 grams myrtle
approximately 5 hands full of leftover bread ()torn into small pieces
200 ml sourdough
200 ml yeast starter (of the most plain yeast we could find)
20 liters of water
Original text in Middle Dutch (spoken between 1200 and 1500 in the current Netherlands and Flemish-Belgian region):
Om te maken goet bier, neemt gherste ende witte evene, na dat ghi brauwen wilt goet bier; ende wildi, doeter terwe in. metten andren doet malen, dan doet water in een ketel te viere ende doet hu meel vanden grane vorseit int water ende roert al omme. laet zieden toten .ij. deele terdendeel in, dan doet of ende laet coelen ghelijc bloet laeu. dan doet in hu vat; dan neemt goeden heve ende ondergyst, ende doet te gader. ende dan neemt van der selver werse ende tempert de heve ende den onderghist te gader ende roert wel over oep. dan doet in hu vat ende laet ligghen heffen; het sal boven huut heffen ende werden goet bier ten derden daghe te drinken. ende weet dat ghi in hu werse oec moet [doen] allettel hoppen, ende ghaghel, ende broet, ende laet zieden al over oep, deen metten andren.
Translation into modern English:
To make good beer, take equal amounts of barley and oats. For quality, you can add some wheat. Mill the grains together. Put water in a kettle and put it on a fire. Add the milled grains carefully and stir. Boil off one third. Take it off the fire and let it cool to blood temperature. Then put it in a barrel. Take good yeast and bottom-yeast together and mix it well with some wort. Put it in the barrel and let it ferment. The yeast will spill out from the top and on the third day the beer will be good to drink. Know that you need to add some hop, gale, and bread to the wort, and let it boil together.
