Cristina Olvera was known for her delicious tamales over the years, but it wasn’t until 2019 that she decided to go all in on her aspiring catering company. To obtain the licensing and qualifications necessary to operate her small business, she took over a humble restaurant at a swap meet in West Valley City (Salt Lake City), Utah making classic Mexican dishes like tacos, tortas, and of course her tamales.
A few months later in early 2020, on a day when the total sales of the restaurant amounted to $11, daughter Frida Guerrero had the idea to bring excitement and buzz to the restaurant with the addition of trending birria tacos–completely new to the menu at La Casa Del Tamal and practically unknown to locals in Salt Lake City. Guerrero reassured her mother that her birria was the best she had ever tasted and that everyone who tried them would love them, but Cristina had her hesitations.
Thanks to word of mouth, social media, and the irresistible menu items, La Casa Del Tamal quickly became one of Salt Lake City’s most beloved restaurants, with a long line of food enthusiasts each day waiting for their turn to try the coveted birria tacos.
Today La Casa Del Tamal can be found at their new location on 5600 West in West Valley City and the Olvera family has more exciting plans on the way which we fully detail in this episode.
