My first batch of making plumb wine
So I moved into my home in spring of 2015.
I had a wild jungle growing in my backyard. After a couple months of pruning and hard labor, my backyard started looking clean(er).
It took me 2 damn years though.
Anyways, to my delight, I discovered a plumb tree that produced tons of fruit.
With the excess multiple grocery bags of plumbs that I couldn’t get rid of, I decided to take a crack at making a plumb wine.
Maybe if you are into making some wine with your own fruit, this podcast will be a good listen.
I gotta be honest, I really didn’t delve super deep into research before tackling this task.
I was able to produce something from my own fruit tree that yielded a few cases of wine measuring around 14.5% alcohol; which is about right for a dark wine.
I basically crushed the shit out of the plumbs. It wasn’t a therapeutic process. It was damn laborious.
I was in the kitchen with a potato smasher, a big pot and a screen in the pot.
I crushed the shit out of the plumbs, leaving behind the skins and seeds.
The plumbs took some remorse on me by squirting me a few times before their final death blow.
I persisted, bag after bag. My arm was sore, but I kept going.
I ended up with a crap load of thick plumb juice with hella pulp.
I then placed the juice in a carboy, added some chemicals and yeast. I set it and forgot about it.
I did run into some issues with understanding what chemicals did what.
However in the end, I bottled a good amount of finished wine.
I also have a carboy full of old wine from that batch. I has been aging…but I’m not sure if it’s good or nasty by now.
Overall, I learned that I would rather make beer. The process is similar to making beer, but different also.
It is a pretty laborious process as I mentioned; I have no more desire to crush multiple pounds of plumbs.
The coolest thing I liked about it was simply trying something new. I got decent results from my first attempt. If I ever decide to try it again, maybe I will do better. IF.
