Step 02: Blend the cooked white beans into a completely smooth purée.
Step 03: Add the bean purée to the syrup and cook over medium heat until it thickens to “road stage” (when you pass a spatula across the bottom and it leaves a clear path).
Step 04: Stir in the ground almonds and mix until fully combined.
Step 05: Add the butter and stir constantly until melted. Remove from heat and cool for 15 minutes.
Step 06: In a separate bowl, whisk the egg yolks and egg white together.
Step 07: Return the pot to very low heat and slowly drizzle in the eggs, stirring constantly.
Step 08: Let it come to a gentle boil, then remove from heat. The filling is ready.
Step 09: Preheat oven to 200°C (390°F). Lightly flour small tart molds.
Step 10: Fill each mold halfway with the mixture.
Step 11: Bake for 20–25 minutes until golden and set. Tip: They will puff slightly and settle as they cool — avoid overbaking.
Step 12: Let cool completely, unmold, and dust generously with powdered sugar.
