If so, you might be living beyond human pace and human scale. For hundreds of thousands of years our species lived as hunter-gatherers, living a human-paced life. Today, we live at break-neck speed, and in a constant state of over-consumption of information. We are not wired for this incessant processing of content and stimulation. All the Greens Salad
Ingredients:
Iceberg lettuce
1 cucumber
Fresh dill
Fresh parsley
Fresh basil
Dressing:
1 cup fresh spinach
1/2 avocado
2-3 tablespoons olive oil
1/2 cup apple cider vinegar
1/3 cup bread and butter pickles with juice
Garlic (as much as you like)
Salt and pepper
Instructions: Wash and chop the greens, cucumber, and fresh herbs. Toss in a big bowl. Blend the dressing ingredients together and pour over salad, mix thoroughly. Top with rotisserie chicken or salmon or hummus and tomatoes. Enjoy!
High Protein Cottage Cheese Chocolate Chip Cookies
Ingredients
Instructions:
In a blender or food processor, blend the cottage cheese until completely smooth. This helps it mix evenly into the batter.
In a large mixing bowl, whisk together the blended cottage cheese, honey (or maple syrup), egg, and vanilla extract until smooth.
Add the oat flour, baking soda, cinnamon, and salt to the wet mixture. Stir until combined.
Fold in chocolate chips.
Scoop out tablespoon-sized portions of dough onto a parchment-lined baking sheet. Bake at 350°F (175°C) for 10-12 minutes, until the edges are golden brown. Enjoy!
