Mystical Witch Soup

Ingredients:

• 1 tablespoon olive oil
• 1 large onion, chopped
• 3 cloves garlic, minced
• 2 carrots, diced
• 2 celery stalks, sliced
• 1 cup butternut squash, cubed
• 1 (15 oz) can cannellini beans, drained
• 4 cups vegetable broth
• 1 teaspoon thyme
• 1 teaspoon sage
• 1/2 teaspoon cinnamon
• Salt and black pepper to taste
• Optional garnishes: fresh parsley, a drizzle of coconut milk, or chili flakes

Instructions:

1. In a large pot, heat the olive oil over medium heat. Add the chopped onions and sauté until translucent. Incorporate the garlic, cooking for another minute until fragrant.
2. Add the diced carrots, sliced celery, and butternut squash. Cook for 5-7 minutes, stirring occasionally, until vegetables are slightly tender.
3. Pour in the vegetable broth. Stir in the thyme, sage, cinnamon, salt, and black pepper. Bring to a boil.
4. Reduce the heat and let the soup simmer uncovered for 20-25 minutes, allowing flavors to meld and vegetables to soften fully.
5. Add the cannellini beans during the last 5 minutes of simmering. For extra creaminess, blend a portion of the soup with an immersion blender and stir back into the pot. Serve hot, garnished with fresh parsley or coconut milk.

Flourless Pumpkin Brownies 

Ingredients:

• 3/4 cup almond butter (or other natural nut butter)
• 3/4 cup canned pumpkin puree
• 2 eggs
• 1/2 cup maple syrup
• 1 tsp vanilla
• 1/2 cup cocoa powder
• 1/2 tsp baking soda
• pinch of salt
• 1/2 cup chocolate chips  

Instructions:

Preheat oven to 350 degrees. Grease 8x8 baking dish, set aside. In a large bowl, whisk together nut butter and pumpkin purée. Then whisk in eggs, maple syrup, and vanilla. Add cocoa powder, baking soda, and salt to wet ingredients, mix. Stir in chocolate chips. Bake for 22-25 minutes. Cool, cut, enjoy!

Beef Stew

Ingredients:

1 pound stew meat 

2 tablespoons butter

Carrots

Potatoes

Celery

Onions

Garlic

1 can diced tomatoes

1/2 cup white wine

1 cup chicken broth

Salt and pepper

Herbs de Provence 

Instructions: Melt the butter in pot, season beef cubes with salt, pepper, and herb mixture. Brown beef, remove from stew pot, set aside. Add more butter or olive oil to pot, sauté onions, garlic, carrots, and celery, sauté until onions turn translucent. Add diced tomatoes, broth, wine, and potatoes to pot. Bring to a boil, then turn heat down, simmer until potatoes become fork tender. Season to taste. Serve with crusty bread. Enjoy! 

2 Ingredient Chocolate Mousse 

Ingredients:

• 1 ½ cups (357 g) heavy cream, cold and divided
• 1 cup (182 g) chocolate chips, semi-sweet (or your preference)

Instructions:

• In a microwave-safe bowl, heat ½ cup of the heavy cream for 50 seconds (depending on microwave strength). 
  
  
• Add the chocolate chips to the cream and stir until the chocolate has melted. This will take 1-2 minutes. Set aside to cool.
  
  
• Pour the remaining 1 cup of heavy cream into a medium bowl. Using a hand-held or stand mixer, beat until soft peaks form. Continue whipping the cream until stiff peaks form.
  
  
• Slowly fold in half the whipped cream into the chocolate mixture with a large spatula. Gently fold in the rest of the whipped cream.
  
  
• Divide the mixture between 4 ramekins or cocktail glasses (I used lowball glasses). Refrigerate for at least one hour, up to overnight, before serving.
  
  
• Serve topped with extra whipped cream

We may never know exactly how this Sabbat looked long ago, but we can be relatively certain that it was an end of summer celebration and a time to usher in the dark half of the year. Ingredients:

9-10 eggs

1/2-1 cup cottage cheese

1 cup Shredded cheese

Parmesan cheese on top

1/2 cup Milk

Onions

Garlic

Peppers

Sun-dried tomatoes in olive oil

Cherry tomatoes

Salt

Pepper

Red pepper flakes

Fresh herbs- dill, parsley, or basil work nicely 

Instructions: Preheat oven to 375 degrees. Grease 9x13 baking dish, set aside. Sauté sun-dried tomatoes in olive oil with onions and garlic until fragrant. Add peppers and cherry tomatoes, sauté until onions and peppers become soft and cherry tomatoes blister, set aside. Whisk together eggs, milk, cottage cheese, and shredded cheese, season with salt & pepper and red pepper flakes. Add veggies to prepared baking dish, spread evenly. Pour egg mixture on top of veggies, add more milk if needed, stir gently. Top with freshly grated Parmesan cheese and herbs, bake for 35 minutes or until fork comes out clean and cheese is golden brown and bubbly. Enjoy! 

Orange Cinnamon Milk Tea

  Ingredients:

• 1 cup water
• 1 black tea bag (or 1 tsp loose leaf black tea)
• peel of 1/2 orange (save some for garnish)
• 1 cinnamon stick
• 1 tsp brown sugar (or to taste)
• 1 tsp vanilla extract
• 1 cup milk (or your preferred milk)
• orange peel twist or orange slice for garnish

Instructions:

• In a small pot, bring 1 cup of water to a boil.
  
  
• Once the water is boiling, add the orange peel and the cinnamon stick. Let it simmer for 2-3 minutes to infuse the flavors.
  
  
• Add the black tea bag (or loose leaf tea) to the pot. Steep for 3-5 minutes, depending on how strong you like your tea. Strain the tea into your cup, removing the cinnamon stick and orange peel. Remove the tea bag afterward.
  
  
• Stir in the brown sugar and vanilla extract while the tea is still hot, so the sugar dissolves completely.
  
  
• Pour in the milk and allow the tea to gently heat for another 2-3 minutes. Do not let it boil.
  
  
• Strain the tea into your cup, removing the cinnamon stick and orange peel.
  
  
• Add a twist of orange peel or a slice of orange to garnish, and enjoy your warm, fragrant Orange Cinnamon Milk Tea!

Cookie Butter Chai Tea Latte

Ingredients:

• 2 chai tea bags
• 1 cup boiling water
• ice for serving
• Milk of choice 

Brown Sugar Syrup:

• 4 tbsp lightly packed brown sugar
• 1/2 tsp ground cinnamon
• 6 tbsp water
• 1 tsp vanilla extract

Instructions:

• In a mason jar or mug, add the tea bags and water and let steep about 10 minutes.
• In a small frying pan or pot on the stove, add the syrup ingredients and heat on medium-high, whisking to combine. Once it starts simmering, lower the heat to medium-low and simmer about 3-5 minutes, stirring frequently, until sugar has completely dissolved and syrup has thickened just slightly. Remove from the heat and set aside.
• To the hot tea, add 2 tbsp of brown sugar syrup and stir until combined.
• Fill your serving glasses 3/4 full with ice. Divide the chai tea mixture between the glasses, then top with milk. Enjoy!

Ingredients:

No boil lasagna noodles

Ground “beef” 

1 tablespoon olive oil

1 jar Marinara sauce 

Two cups spinach

8 ounces ricotta 

1 egg

Mozzarella cheese

Parmesan cheese

Herbs de Provence 

Garlic powder 

Salt and pepper 

Fresh herbs for garnishing top 

Instructions: Preheat oven to 400 degrees. Brown “meat” in olive oil. Season with herbs to Provence, garlic powder, salt and pepper, set aside. Mix ricotta and egg in a separate bowl, season with herbs, salt and pepper. Chop fresh spinach, mix into ricotta mixture. In 9x13 baking dish, spread layer of marinara sauce. Layer with lasagna noodles, overlapping slightly. Spread “meat” over noodles, add layer of sauce. Add another layer of noodles, top with ricotta mixture, mozzarella, and Parmesan. Add another layer of noodles, top with marinara, and a final layer of cheese. Season with dried herbs and garlic powder. Sprinkle fresh herbs on top. Bake for 30-40 minutes, covered with foil. Remove foil, bake until top is golden brown. Enjoy! 

One Bowl Cinnamon Tea Cake

• 1 ½ cups all-purpose flour
• 1 cup sugar
• ½ cup vegetable oil
• 1 cup milk or plant-based milk
• 2 large eggs or flax eggs
• 2 tsp baking powder
• 1 tsp vanilla extract
• 1 tsp ground cinnamon
• ¼ tsp salt

Instructions:

1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan. 
2. In a large bowl, mix the flour, sugar, baking powder, cinnamon, and salt. 
3. Add oil, milk, eggs, and vanilla to the dry ingredients. Stir until smooth. The should be free of lumps.
4. Pour the batter into the prepared pan and smooth the top with a spatula. 
5. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Keep an eye on the cake towards the end of the baking time to prevent overcooking.
6. Let the cake cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
7. Slice and enjoy!

Overnight Savory French Toast

Ingredients:

• 6 large eggs
• 2 cups milk
• 1 tablespoon Dijon mustard
• Salt and pepper
• 1 tablespoon olive oil 
• Onion
• ¼ cup chopped chives
• 1 loaf French or Italian bread or Challah bread 
• 6 ounces Gruyère cheese, shredded
• Turkey bacon 

Instructions:

• Sauté onions in olive oil until golden brown. Set aside. 
• Grease a shallow 1½-quart ceramic baking dish. In a medium bowl, whisk eggs, milk, mustard, ¼ teaspoon salt and ¼ teaspoon freshly ground black pepper until well blended. Stir in half of the chives and uncooked chopped bacon. 
• Arrange half of bread in bottom of prepared baking dish, overlapping slices to fit. Pour half of egg mixture over bread and sprinkle with two-thirds of Gruyère.
• Cover with remaining bread, overlapping slices. Pour remaining egg mixture over bread; gently press down to help bread absorb egg mixture. Sprinkle with remaining one-third of Gruyère. Cover and refrigerate overnight.
• Preheat oven to 350°F. Bake 50 to 60 minutes or until puffed and golden and tip of knife inserted in center comes out clean, covering top during last 15 minutes if browning too quickly.
• Let stand 10 minutes to set custard before serving. Sprinkle with remaining chives.

Blackberry Hot Chocolate

Ingredients:

• 2 cups milk
• 1/4 cup dark chocolate chips
• 1/2 cup fresh blackberries, pureed
• 1/2 teaspoon vanilla extract
• Whipped cream and blackberries for garnish

Instructions:

1. Purée blackberries in blender or food processor. Pour the puree through a fine-mesh strainer to remove any seeds. You will need to push the puree through with a spatula or spoon.
2. Heat milk in a saucepan over medium heat until warm.
3. Add dark chocolate chips, whisking until melted and smooth.
4. Stir in blackberry puree and vanilla extract.
5. Pour into mugs and top with whipped cream and additional blackberries.

Carrot Cake Quinoa Bowls

Ingredients: 

• ⅔ cup uncooked quinoa
• 1 ¾ cups milk of choice 
• ¾ cup grated carrots
• 1 cup chopped and peeled apples 
• 1 teaspoon cinnamon
• ½ teaspoon vanilla extract
• 2 tablespoons maple syrup
• 1 tablespoon almond butter or peanut butter 
• Pinch of salt
• ¼ cup nuts and/or pumpkin seeds 

Instructions:

1. In a saucepan, heat the quinoa and milk over medium heat.
2. Once the mixture starts to simmer, add in the carrots, apples, cinnamon, and vanilla extract. Turn the heat down to low. Cover and cook for about 15 minutes, stirring occasionally.
3. Add in the nut butter and a pinch of salt. Stir until combined and thickened.
4. Pour the quinoa into bowls. Top each portion with extra nut butter and toasted nuts and/or pumpkin seeds.

Apple Cider Chai Tea Latte

Ingredients:

• 2 cups apple cider
• 1 cup water
• 2 black tea bags
• 1 stick cinnamon
• 4 whole cloves
• 4 whole cardamom pods
• 1 slice fresh ginger
• 1/4 cup milk of choice
• 2 tablespoons honey or maple syrup
• whipped cream optional
• ground cinnamon for garnish

Instructions:

• Combine 2 cups cider and cup of water in a medium saucepan. Add the cinnamon, cloves, cardamom, and ginger. Bring this mixture to a simmer over medium heat, allowing the spices to infuse the liquid for about 5 minutes.
  
  
• Once the cider and spices are simmering, remove the pot from heat and add 2 black tea bags. Let the tea steep for 4 to 5 minutes, remove tea bags.
  
  
• Using a strainer, strain the liquid into a container.
  
  
• Return the strained liquid to the saucepan and heat gently on low. Stir in 2 tablespoons of sweetener, adjusting sweetness to your preference. Then, add 1/4 cup milk, whisking until the latte is warm and frothy but not boiling.
  
  
• Pour the Chaider into your favorite mugs. Top with whipped cream and sprinkle a pinch of ground cinnamon. Enjoy!

Turmeric Ginger Apple Crisp

Ingredients:

Apple Filling

• 6 medium Honeycrisp apples about 2 pounds, cored and sliced into ¼-inch pieces
• 1 tablespoon fresh ginger finely grated
• 1 teaspoon ground turmeric
• 1 teaspoon ground cinnamon
• 1/4 teaspoon freshly ground black pepperenhances turmeric absorption
• 2 tablespoons fresh lemon juice

What’s for dinner?

Arugula Pumpkin Pizza

 Ingredients:

• 1 lb pizza dough (I got mine from Trader Joe's)
• ⅓ cup pumpkin apple cider vinaigrette (recipe below)
• 2 cups mozzarella cheese shredded
• ½ cup goat cheese crumbled
• 1 cup arugula
• 1 yellow onion 
• 1 tbsp olive oil
• Chicken apple sausage crumbled 

For the Pumpkin Apple Cider Vinaigrette:

• ½ cup olive oil
• ¼ cup apple cider vinegar
• ¼ cup canned pumpkin purée
• 2 tbsp honey (maple syrup works too!)
• 1 tsp Dijon mustard
• 1 clove garlic peeled and minced
• ¼ tsp sea salt
• freshly ground black pepper
• 2 tbsp water

Instructions:

1. Preheat oven to 425° F. 
2. Remove pizza dough from refrigerator and let sit on counter for 10-20 minutes to warm up.
3. While the oven is preheating, make your pumpkin apple cider vinaigrette. Place all ingredients in blender or food processor or mix in a bowl.
4. When pizza dough has sat out for 20 minutes, form it into a 10-12 inch circle-ish! 
5. Spread out pumpkin apple cider vinaigrette evenly and top with sausage, mozzarella, Parmesan, and goat cheese. Bake for 25 minutes. 
6. Pull out pizza and add arugula and another sprinkle of cheese. Bake for a couple more minutes until arugula has wilted and cheese and crust are golden brown. Enjoy! 

Apple Cider Mocktail

Ingredients:

• 4 cups apple cider
• 2 cups sparkling water or club soda or natural soda like Poppy or Ollipop 
• 1 tablespoon fresh lemon juice
• 1 teaspoon ground cinnamon
• Apple slices and cinnamon sticks for garnish
• Ice cubes

Instructions:

1. Mix the Base: In a large pitcher, combine the apple cider, sparkling water, lemon juice, and ground cinnamon. Stir gently to mix the flavors without losing too much carbonation. 
2. Prepare Serving Glasses: Fill glasses with ice cubes to keep the mocktail chilled.
3. Pour and Garnish: Pour the apple cider mixture over the ice in each glass. Garnish with fresh apple slices and a cinnamon stick. Enjoy!

Creamy Pumpkin Gnocci 

Ingredients:

Pumpkin gnocci 

Butter

Olive oil

Onions

Garlic

1/2 cup broth

1/2 cup milk (your choice)

1/2 cup half & half  (or use one can of coconut milk) 

Chopped spinach

Fresh dill

Salt and pepper

Red pepper flakes 

Freshly grated Parmesan cheese 

Instructions: Caramelize onions in one tablespoon butter and olive oil. Add garlic sauté until fragrant. Add broth, milk, and half and half. Season with salt & pepper and red pepper flakes. Stir in chopped spinach and fresh dill. Boil gnocchi according to instructions. Drain pasta the add to cream sauce. Stir to coat, top with freshly grated Parmesan cheese. Enjoy! 

Blueberry Cottage Cheese Bake

Ingredients:

2 cups cottage cheese (low-fat or full-fat)

2 large eggs

1/4 cup maple syrup or honey

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

1 cup rolled oats

1 cup fresh or frozen blueberries

1/4 teaspoon salt

1 teaspoon baking powder

1/4 cup chopped walnuts or almonds (optional)

Cooking spray or butter for greasing the dish

Instructions:

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease an 8x8-inch baking dish with cooking spray or butter.

Mix Wet Ingredients: In a large bowl, whisk together the cottage cheese, eggs, maple syrup (or honey), vanilla extract, and cinnamon until well combined.

Combine Dry Ingredients: In another bowl, mix the rolled oats, salt, and baking powder together.

Combine Mixtures: Gradually fold the dry ingredients into the wet mixture until just combined. Be careful not to over-mix.

Add Blueberries: Gently fold in the blueberries and, if using, the chopped walnuts or almonds.

Transfer to Baking Dish: Pour the batter into the prepared baking dish, smoothing it out evenly.

Bake: Place the dish in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

Cool and Serve: Allow the bake to cool for about 10 minutes before slicing. Serve warm, optionally topped with a dollop of yogurt or additional maple syrup.
