Cheesy Lemon Chicken Pasta
Description
Pecorino Romano and Parmesan give cheesy flavor to this easy lemon-chicken pasta dish that’s sure to please the whole family!
Ingredients
1 (16 ounce) package linguine pasta
1 cup frozen peas
2 tablespoons butter
2 tablespoons olive oil
1 (8 ounce) package button mushrooms, sliced
1/2 cup diced onion
1 pound skinless, boneless chicken breasts, cut into 1-inch chunks
kosher salt and ground black pepper to taste
1/2 (8 ounce) package reduced-fat cream cheese, cubed and softened
1/4 cup fresh lemon juice
2 teaspoons lemon zest
1/2 cup grated Parmesan cheese
1/4 cup grated Pecorino Romano cheese
1/4 cup chopped flat-leaf (Italian) parsley
Directions
Bring a large pot of lightly salted water to a boil. Cook linguine at a boil until tender yet firm to the bite, about 11 minutes, adding frozen peas during the last 2 minutes of cooking time. Drain pasta and peas, reserving 1 cup cooking liquid. While the pasta is cooking, heat butter and olive oil in a large skillet over medium-high heat. Add mushrooms and onion; cook until mushrooms are brown, 5 to 7 minutes. Season chicken with salt and pepper. Cook in the same skillet over medium-high heat until browned and no longer pink, 7 to 10 minutes. Add the mushrooms back to the skillet. Add cream cheese, lemon juice, and lemon zest; stir until cream cheese is melted. Remove from heat. Fold in Parmesan and Pecorino Romano cheeses, then parsley. Toss with pasta and peas, adding reserved cooking liquid as necessary to make a sauce.

A scorpion bowl is a mouthwatering, punch-like cocktail typically found in Chinese restaurants. It goes great with Chinese and Polynesian food.
Ingredients
3 cups crushed ice
10 fluid ounces pineapple juice
8 fluid ounces fresh orange juice
3 fluid ounces fresh lemon juice
2 fluid ounces gin
2 fluid ounces 151 proof rum
2 fluid ounces light rum
2 fluid ounces vodka
2 fluid ounces grenadine syrup
1 fluid ounce dark rum
8 maraschino cherries
4 pineapple chunks
Directions (Cocktail)
Fill a large pitcher with crushed ice. Pour pineapple juice, orange juice, lemon juice, gin, 151-proof rum, light rum, vodka, grenadine, and dark rum over ice; stir well. Pour into a large, decorative cocktail glass. Garnish with cherries, pineapple and straws. Makes 4 drinks.

Air Fryer Panko Crusted Pork Chops
Description
Time to drag out your air fryer (or invest in one if you don’t have one yet!) and prepare yourself to enjoy these juicy pork chops!
Ingredients
4 cups water, divided
2 tablespoons kosher salt
2 tablespoons white sugar
1 sprig fresh rosemary
1 large bay leaf
4 (6 ounce) pork chops, about 1/2-inch thick
1 large egg
1 cup panko bread crumbs
2 tablespoons freshly grated Parmesan cheese
1 teaspoon Italian seasoning blend
freshly ground black pepper, to taste
extra-virgin olive oil cooking spray
1 sprig of fresh parsley for garnish (optional)
1 sprig of rosemary for garnish (optional)
Directions
Pour 1 cup water in a 4-cup microwave-safe measuring cup. Microwave until boiling, about 4 minutes. Stir in kosher salt and sugar, until dissolved. Add remaining 3 cups water to make a brine. Place rosemary sprig and bay leaf in a 1-gallon zip-top bag. Carefully pour in brine and add pork chops. Seal the bag, removing as much air as possible, and refrigerate about 2 hours. Remove chops from the brine and discard the brine. Pat chops dry with paper towels. Preheat the oven to 400 degrees F (200 degrees C). Break egg into a shallow bowl and beat lightly. Combine panko, grated Parmesan, Italian seasoning blend, and black pepper, and place on a plate or cutting board. Dip each pork chop in the egg, then coat all sides with the panko mixture. Spray both sides of the coated chops with extra-virgin olive oil. Place chops in the air fryer in a single layer, with chops not touching, and air-fry for 7 to 8 minutes per side, for a total of 14 to 16 minutes. An instant-read thermometer inserted into the center of the chops should read 145 degrees F (63 degrees C). Serve warm, garnished with parsley and additional rosemary sprigs, if desired.

Pineapple Sangria
Description
Summer is drawing to a close, but that doesn’t mean that we have to skip enjoying a nice sangria! This one takes some time (start it the day before planning to drink it), but you won’t be sorry!
Ingredients
2 (750 milliliter) bottles Sauvignon Blanc
2 cups pineapple juice
1 cup triple sec
1/2 cup brandy
1/2 cup chopped fresh pineapple
1/2 cup chopped orange
1 lemon, seeded and chopped
1/4 cup chopped lime
2 cups lemon-lime flavored carbonated beverage (such as 7-Up, Sprite or Sierra Mist)
Directions (Cocktail)
Mix Sauvignon Blanc, pineapple juice, triple sec, and brandy together in a large pitcher. Add chopped pineapple, orange, lemon, and lime. Cover and refrigerate, 8 hours to overnight. Stir in lemon-lime soda before serving. Makes about 1 gallon.

Hi Bill. Not sure you will get this. I have an old i-Mac running on Ubuntu now. After much hassle got it running WSJT-X with my QRP LABS QDX kit. Now (all of a sudden) CAT control works….it receives etc but when you hit transmit the light flashes (XMIT ON) but NO OUTPUT POWER. I thought maybe my transceiver had blown its final BUT on my surface pro it works fine (WINDOWS11). Any thoughts? 73 de VK2AOE.

Garlic Chicken Stir Fry
Description
Russ and I are huge fans of stir-fry and such… and this was picked for dinner tonight. It sounds super tasty!
Ingredients
2 tablespoons peanut oil
6 cloves garlic, minced
1 teaspoon grated fresh ginger
1 bunch green onions, chopped
1 teaspoon salt
1 pound boneless skinless chicken breasts, cut into strips
2 onions, thinly sliced
1 cup sliced cabbage
1 red bell pepper, thinly sliced
2 cups sugar snap peas
1 cup chicken broth
2 tablespoons soy sauce
2 tablespoons white sugar
2 tablespoons cornstarch
Directions
Heat peanut oil in a wok or large skillet. When oil begins to smoke, quickly stir in 2 cloves minced garlic, ginger root, green onions and salt. Stir fry until onion becomes translucent, about 2 minutes. Add chicken and stir until opaque, about 3 minutes. Add remaining 4 cloves minced garlic and stir. Add sweet onions, cabbage, bell pepper, peas and 1/2 cup of the broth/water and cover. In a small bowl, mix the remaining 1/2 cup broth/water, soy sauce, sugar and cornstarch. Add sauce mixture to wok/skillet and stir until chicken and vegetables are coated with the thickened sauce. Serve immediately, over hot rice if desired.

Blue Hawaiian Cocktail
Description
The Blue Hawaiian is a fun, refreshing cocktail made with rum, cream of coconut, pineapple juice, and Curacao liqueur to create its signature blue color. Invented in Hawaii in the 1950s, this tiki cocktail will have you crooning like Elvis!
Ingredients
1 cup crushed ice
2 fluid ounces pineapple juice
1 fluid ounce light rum
1 fluid ounce blue Curacao liqueur
1 fluid ounce cream of coconut
1 pineapple slice
1 maraschino cherry
Directions (Cocktail)
Combine crushed ice, pineapple juice, rum, blue Curacao, and cream of coconut in a blender. Puree on high speed until smooth. Pour into a chilled highball glass.

Orange Dreamsicle Lush
Description
Summer calls for cool and refreshing desserts… and this is one of them.
Ingredients (Cookie Base)
1 pouch (17.5 oz) Betty Crocker™ sugar cookie mix
Butter and egg called for on cookie mix pouch for drop cookies
1/3 cup butter, melted
Ingredients (Filling)
2 boxes (3 oz each) Jell-O® orange-flavored gelatin
1/3 cup boiling water
2 boxes (3.4 oz each) Jell-O® vanilla-flavor instant pudding & pie filling mix
2 1/2 cups cold milk
1 package (8 oz) cream cheese, softened
1 cup powdered sugar
1 container (12 oz) Cool Whip frozen whipped topping, thawed
Ingredients (Decoration)
1/2 cup canned mandarin orange segments, drained
Directions
Heat oven to 375°F. Make and bake drop cookies as directed on pouch. Cool completely, about 30 minutes. In food processor, process half of the cookies to coarse crumbs. Remove to medium bowl. Continue to process remaining cookies to coarse crumbs; add to bowl. Stir in melted butter until well blended. In ungreased 13x9-inch (3-quart) glass baking dish, press cookie crumb mixture firmly in bottom. Set aside. In small bowl, place gelatin, and add boiling water; beat with whisk until blended. Stir occasionally about 2 minutes or until mostly dissolved. In medium bowl, beat dry pudding mixes and milk with whisk about 2 minutes or until thick. Stir in dissolved gelatin. Let stand 5 minutes, stirring occasionally. In large bowl, beat cream cheese and powdered sugar with electric mixer on medium speed until smooth, scraping down side of bowl frequently. Beat in 2 cups of the whipped topping. Spread over cookie crust. Pour pudding mixture over cream cheese layer; spread evenly over top. Drop remaining whipped topping by spoonfuls over pudding layer; carefully spread until even. Refrigerate 5 hours. When ready to serve, sprinkle orange segments on top. Cut into 6 rows by 3 rows. Cover and refrigerate any remaining pieces.

Ingredients
2 ounces (4 tablespoons) tequila
4 ounces (1/2 cup) orange juice
3/4 ounce (1-1/2 tablespoons) grenadine syrup (purchased or homemade)
Ice (try our clear ice!)
For the garnish: Cocktail cherry, orange slice
Directions (Cocktail)
Fill a highball glass with ice. Pour in the tequila and orange juice and stir. Pour the grenadine into center of the drink and it will sink to the bottom. Stir gently for sunrise gradient effect. Garnish with an orange slice and cocktail cherry. This drink is sweetly straightforward. If you are a fan of sour cocktails, add a squeeze of lime to add more of a tart flavor. A dash of orange liqueur like Cointreau can give it a little more complexity. You can also make a Tequila Sunset by substituting blackberry brandy for the grenadine. Make the drink with vodka for a Vodka Sunset, or try a Malibu Sunset using Malibu Coconut Rum. Here’s the key to how to make a good tequila sunrise: buy a good tequila! A cocktail is only as good as the alcohol you use. Look for a mid-price range tequila, since the price is typically an indicator of quality. You can use either tequila blanco (“new or not aged) or tequila reposado (aged) in this cocktail recipe. Since it’s a pretty straightforward beachy drink, we went with tequila blanco here. But, it would be even more interesting with tequila reposado: it adds subtle notes of vanilla and oak.
