Barbecue Chicken Pizza Roll
Description
It’s Super Bowl time, and what is better than snack foods for watching the big game! Since Russ and I live in Missouri, and I was raised to support our state teams (and Russ gladly joined in cheering them on), I went on the hunt for a Kansas City based recipe. And KC is known for their BBQ!
Ingredients
1 (13.8 oz) can refrigerated pizza crust
1 cup barbecue sauce, divided
1/2 cup cooked chicken, shredded
1 green onion, chopped
1 cup “pizza style” shredded mozzarella and provolone cheeses
Directions
Heat oven to 400 degrees. Unroll pizza dough onto lightly floured surface; press to form 12-by-8-inch rectangle. Brush 1/2 cup barbecue sauce onto crust to within 1 inch of edges; top with chicken, onions and cheese. Starting at one long side, roll up to form log; pinch edges together to seal. Place, seam side down, on baking sheet sprayed with cooking spray. Bake 20 to 25 minutes or until golden brown. Let stand 10 minutes before slicing. Serve with remaining barbecue sauce.
Cheryl’s Mixed Drink Corner
Ingredients
1 ounce gin
1 ounce vodka
1 tablespoon lime juice
4 ounces lemon-lime soda
Lime wheel, for garnish
Directions
Fill an Old Fashioned glass with ice. Add gin, vodka and lime juice. Top with lemon-lime soda. Garnish with lime wheel.
Russ’s Drink Corner
Sazerac 6-Year Rye Whiskey
Description
Sazerac Rye is distilled and bottled by the Buffalo Trace Distillery. This 6-year-old release is often referred to as “Baby Saz” due to being much younger than it’s Sazerac 18 counterpart. Baby Saz is a low-rye whiskey with a mashbill that barely makes it eligible for the straight rye designation which makes it a bit more floral and sweeter than higher rye whiskies.

Proof: 45% (90 Proof)

Color: Honey gold
Nose: Spiced apple cider, clove, nutmeg, sweet corn, hint of tobacco

Crock Pot Bourbon Chicken
Description
Who doesn’t like a quick and easy Bourbon Chicken? Make it even easier by using your slow cooker!
Ingredients (Chicken)
3 lbs boneless skinless chicken thighs
3 tablespoons cornstarch
1/4 cup sliced green onions (or more to taste)
Ingredients (Sauce)
1/2 teaspoon fresh grated ginger
4 cloves garlic, minced
1/2 teaspoon crushed red chili flakes
1/3 cup apple juice
1 1/2 tablespoons honey
1/4 cup brown sugar
1/4 cup ketchup
3 tablespoons cider vinegar
1/4 cup water
1/4 cup Bourbon
1/4 cup soy sauce
Salt and pepper to taste
Directions
Mix all sauce ingredients in a small bowl. Place chicken in slow cooker, pour sauce over top. Cover and cook on low 6-7 hours or on high 3 hours. Remove chicken and chop into bite sized pieces and cover to keep warm. Meanwhile, combine 3 tablespoons water with cornstarch. Turn slow cooker up to high. Whisk cornstarch slurry into the sauce. Cover and allow to thicken, stirring occasionally (about 10 minutes). Stir chicken back into the sauce and add in green onions. Serve over rice. Note: This recipe is best made with regular (not light) soy sauce. The sauce can also be thickened on the stove top. Create the slurry as above and whisk over medium heat until thickened. Return to slow cooker with chicken and stir in green onions.

Lemonade Rum Punch
Ingredients
4 oz. lemonade
2 oz. pineapple juice
2 oz. coconut rum
1 oz. dark rum
Directions
Pour lemonade, pineapple juice and coconut rum into large glass filled with ice, using a spoon to gently stir the drink. (Or pour into a cocktail shaker, shake and pour into a glass filled with ice.) Top glass with the dark rum, so it floats on top and slowly blends into the rest of the drink, giving it an ombré effect. Serve.

Coca-Cola Fudge Cake
Description
Valentine’s Day is coming up, and what speaks love more than chocolate? I am not a huge fan of chocolate cake, but this cake was a favorite from my childhood
Ingredients (Cake)
1/2 cup Butter
1/2 cup Vegetable Oil
1 cup Regular Coca-Cola
2 cups White Sugar
2 cups Flour
2 Eggs
3/4 cup Unsweetened Cocoa Powder
1 tsp Baking Soda
1/2 cup Buttermilk or ½ cup Milk and 1 tsp Lemon Juice
2 tsp Vanilla
Ingredients (Frosting)
3 cups Powdered Sugar
1/2 cup Softened Butter
1/4 cup Coca-Cola
1/2 cup Unsweetened Cocoa Powder
1/4 cup Chocolate Syrup
1 tsp Vanilla
Directions (Cake)
Butter and flour a 13 x 9 inch sheet cake pan. Preheat oven to 350 degrees F. In a medium saucepan combine butter, coke, and oil. Bring to boil. In a medium bowl, stir flour and sugar until combined. Add to sauce pan, stir. Remove from heat. Stir in eggs, cocoa powder, baking soda, buttermilk, and vanilla. Pour in greased pan. Bake for 30 minutes or until a tooth pick inserted in the center comes out clean.
Directions (Frosting)
In a large bowl cream butter and cocoa powder. Stir in coke, chocolate syrup, and vanilla. Gradually beat in powdered sugar. Frost cake while it is still warm. Serve with vanilla ice cream if desired.

Strawberry Mimosa
Ingredients
1 c. chopped strawberries
1 tbsp. sugar
1 c. champagne, plus more for topping off flute
Directions
In a blender or food processor, blend strawberries, sugar, and champagne until fully combined, then pour into champagne flutes and top with more bubbly. Garnish with a strawberry slice and serve.
